Confession is the way it is because that is how Jesus set it up. Once Jesus breathed on his apostles gave them the power to release or retain sins, Jesus put in motion the sacrement of confession. Through apostolic succession, the preists are given the power to do this sacrement.
Yes, people are only human and of course they will make mistake for their whole lives. That is why confession is offered so much and encouraged so often. This way people can be in a state of grace.
Every time a person goes to confession they have the opportunity to have a new slate and become just as pure as they were at baptism. God is more willing to forgive sins than a mother is to run into a buring house to save her infant. People have a need to get things off of their chest. Why confess your sin to the whole planet on tv show and have everyone know your dirty laundrey. Why not just go to confession, do your penance and then and move on with your life.
Also, no Catholic believes that it is the preist that forgives the sin. It is the Holy Spirit working though the priest that forgives sins.

All that I can remember at least. Having to repeat the same sins over and over again shows us what we need to work on. Being a Christian is a constant struggle against sin, but we must always trust in God's mercy.

Yes. It is a sacrilege to go to confession and intentionally not say all of your sins because that shows that you are not sorry for what you have done and are attempting to pull a fast one on God. If you forget a sin or two, that is ok! God knows that that we do not have perfect memory and He is looking for sorrow for what we know to have done wrong and the intention to progress in the spiritual life and remain free from sin.

I've been Catholic all my lifeand have never been to Catholic church that had confession. So I've never confessed my sins. I confess to God on my own time though.

All my sins. I work hard against repeating them, but God understands that I am doing my best.

The Catholic church has committed more sins than they care to admit.
Read this and you'll know all about them.
