I had some quesadillas at a restaurant and absolutely fell in love with the flavor. It was a meatless variety which combined cheese, vegetables and beans. They put the mixture in between to tortilla shells and grilled them. The cheese helped bind the mixture (like a glue affect). Once grilled serve hot. Yummmmm. You could also alter by replacing the beans with chicken, beef strips, or yes I have even seen some add fish. Just use the ingredients you like the most and experiment. Bon Appetite.

i dont know about most delicious but they were good, get large soft tortilla, the flour ones. chicken breasts, red and green salsa, and taco cheese, and sour cream. grill the chicken, then slice up fine. put in a tortilla put in a lot of nice cheese, and some of each salsa, then grill the tortilla on both sides or fry in a large pan, when toasty on the outside, serve with sour cream , red salsa, and or avacado sauce. this is how they make them at the Peppermill resturants in Las Vegas

omg.. a super good recipe is this one. It is sooo good! Filling too!

Asparagus Brie Quesadillas

1 tbs olive or vegetable oil
1 teas rosemary, thyme, basil
3/4 teas salt
2 flour tortillas ( i used rosemary flavored ones and they were awesome)
1 tbs basil pesto or spaghetti sauce (try using the spaghetti [no meat])
1/2 lb chopped asparagus
1/2 cup red pepper (or mushrooms)
5 oz Brie, sliced
2 tbs mozzarella

Combine oil and herbs and salt in a bowl. Brush on tortillas. Place oil side down in a single layer on a lightly greased cookie sheet. Spread sauce on top. Sprinkle with red pepper and asparagus. Arrange Brie over asparagus. Sprinkle 2 tbs cheese over Brie. Cover with 2nd tortilla and press down firmly. Bake at 375 for 10-15 minutes.

A simple way is to toast the tortillas (both sides) in a frying pan (no need for oil). Then what we do is simply grate whatever cheese we like, put it inside two tortillas, sandwich style, and stick it in the Microwave til the cheese melts. The kids love them...

The best I had were grilled on a skillet. You grill the meat then grill the tortillas and pile on some soft mexican or jack cheese then put it together like a grilled cheese sandwich and cook it on both sides. After its cooked cut into four pie shaped wedges.
