Melt a little butter in a pan. Empty the corn into the pan after draining off the water. Add a pinch of sugar and stir it into the corn. Heat it up until it's nice and warm for awhile. Serve it as a side dish with whatever else you're having. Of course, the butter and sugar don't make it all that healthy... but it tastes good. And it's pretty simple and almost impossible to mess up. :)

Corn souffle
Ingredients:
1 can creamed corn
1 can whole kernel corn
1 package of Jiffy cornmeal mix
1 stick of butter cut in pieces
1 egg
1 cup of sour cream
Mix all ingredients, put in a casserole dish, bake at 375 for 30 minutes. It's fantastic.

"Can Opener Gourmet" Chili
* 1 Can Corn - drained
* 1 Can Dinty Moore Beef Stew
* 1 Can Black Beans
* 1 Can Chopped Tomatoes
* 1 Can Stag or Hormel No Beans Beef Chili
* 1 Can Chopped Green Chiles
* 3 TB Chili Powder
* 1 TB Garlic Powder
Mix in a pot and simmer until hot.

This is one of my husband's favorites! Everyone always loves this, and requests it too.
Very Yummy Corn
Ingredients:
1 can creamed corn (15.25 oz.)
1 can whole kernel corn with juice (15.25 oz.)
1 package of Jiffy corn muffin mix
1 stick of butter, melted
2 eggs, beaten
1 cup of sour cream
¼ cup of sugar, optional
Directions:
Mix all of the ingredients together. Pour into a greased casserole dish. Bake at 350 degrees for 1 hour.

Canned corn can be served as follows, and is delicious....drain off water, pour corn in glass bowl...add two tablespoons butter (not margarine)...salt and pepper to taste...heat in microwave until warmed through. I prepare canned corn by using this method and have for years...is delicious.

Mix it into a "batter" of semolina (coarse ground), a little cream, fresh rosemary, grated monteray Jack cheese and a little salt. If you read the package on how to prepare the semolina and mix the other ingredients in slowly and sparsely, you'll have a nice side dish.

Mix it with a can of black beans (rinsed), chopped green onion, chopped cilantro and a seeded and chopped tomato. Squeeze in the juice of one lime. Drizzle it with extra virgin olive oil. Chill for a while. It makes an awesome corn salsa.
