You shouldn't lie, but you also should say anything insulting. Just say you don't like it. You don't want to offend them but not liking what the obviously think is good. But you also don't want them to think you like it since they'll probably serve you more of it.

Why should there be a choice about this???? "Proper" or otherwise?

Common sense and honesty! If you don't care for it, simply and politely say so!

And how would you know it tasted (or would taste) like garbage? You've had that before huh? Was that good?

It really depends on the person. It's typically polite to lie about something like that. If it is a really close friend of your's, I would tell them in private

Always tell the truth. If you lie to them you are only hurting them. If they think it tastes good then they will serve it at their next dinner party , you know the one for their real friends not you the test Guinea pig.

The kindergarten teacher I worked for always told the kids to find one nice thing to say. She was referring to a 5 year olds art project, but I think it would apply here also.

When in doubt about anything, switch places, and see how your response would affect you. (if you were the other person) If you honestly would not be offended by your actions &/or words, then it should be acceptable. But you must be perfectly honest with your decision.

You could take it. Chew it up a little. Pretend your wiping your mouth and in actuality transfer the food to the napkin.

Tell them that its just not your type of food, if you lie, they might think you really like it and encourage you to eat more.
