Spicy Chicken [similar to P.F. Chang's]

If you're looking for something to do with those chicken breasts sitting in the fridge, try this dish with a sweet and spicy zing. If you can't find straight chili sauce for this recipe, the more common chili sauce with garlic in it will work just as well.

Sauce
2 teaspoons vegetable oil
2 tablespoons chopped garlic (3 to 4 cloves)
3 tablespoons chopped green onions (about 3 onions)
1 cup pineapple juice
2 tablespoons chili sauce
2 tablespoons white distilled vinegar
4 teaspoons granulated sugar
1 teaspoon soy sauce
2 tablespoons water
1/2 teaspoon cornstarch

Also:
1 cup vegetable oil
2 chicken breast fillets
1/3 cup cornstarch

1. Make the sauce by heating 2 teaspoons vegetable oil in medium saucepan. Saute the garlic and onion in the oil for just a few seconds, not allowing the ingredients to burn, then quickly add the pineapple juice, followed by chili sauce, vinegar, sugar, and soy sauce.
2. Dissolve cornstarch in 2 tablespoons water and add it to the other ingredients in the saucepan. Bring mixture to a boil and continue to simmer on medium/high heat for 3 to 5 minutes or until thick and syrupy.
3. Heat 1 cup vegetable oil in a wok or a medium saucepan over medium heat.
4. While oil heats up, chop chicken breast fillets into bite-size pieces. In a medium bowl, toss chicken pieces with cornstarch until well-dusted.
5. Saute coated chicken in the hot oil, stirring occasionally, until light brown. Remove chicken to a rack or paper towels to drain for a moment. Pour chicken into a medium bowl, add sauce and toss well to coat chicken. Serve immediately with rice on the side.

Serves 2. Enjoy!

is it a recipe you are after or the fact that your chicken gets too dried out? if its the dried out chicken that bothers you, try to boil it first...boiling it first ensures that it is throughly cooked before frying, baking, bbqing, etc...ofcourse that means that it will not take as long to cook the way you deside later, but chicken is tricky and i think its a bonus if it is already cooked, that way you can take less time in the kitchen!!! try lemon pepper, and serve over rice if it's the recipe that you really want. just like frying, only add lemon pepper instead of salt and black pepper. and dont fry in lots of oil, just use a little bit. (good luck)

my favorite recipe for chicken breast is for chicken fajitas. You can buy the marinade in the store or make it yourself. After marinating the meat you cook it with sweet onions, green pepper and put it on tortillas with cheddar cheese, tomatoes, salsa (if you like) and shredded lettuce. Wrap the whole thing up and enjoy! yummy!

Not only good but healthy too. Boneless skinless breasts,in casserole dish with lemon juice,savory,rosemary,basil,and fresh cracked pepper.Cover and bake at 225 degress for 1 hr and 45 min.

MAGDALINAS VALENTINE CHICKEN

4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount

flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.

Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.

Drain and remove excess grease from skillet.

Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.

Simmer on medium heat till onions are soft.

I love Alice Springs chicken; they have it at Outback Steakhouse. Look up a recipe on Yahoo and the first or second hit is a good recipe (I've tried it). Yum.

make a teriakki sauce out of soy sauce and honey-little salt pepper garlic added to it-can make as sweet as want by increasing honey ratio-suggest starting at 50-50--chef for living-kep the peace old hippie here

try stir frying your chicken cubes in olive oil , garlic, salt, pepper, and sweet and sour mix. Don't poke the chicken too much or press down on it, stir it up with some peanuts and thinly sliced bok choy.

Here. This will save you time.

Sweet Rub
6 tbsp brown sugar
3 tbsp dry mustard
1 tbsp black pepper
2 tbsp chili powder
2 tbsp garlic powder
1 tbsp onion salt
3 tbsp onion powder
2 tbsp salt
1 tbsp ground cumin
1 tbsp celery salt

Combine all ingredients in airtight container and store.
