I do not know where you are and that is important as some of the materials that you need are important. such as Banana leaves which can not be found eeasily if you do not live where Bananas grow or you do not have Bananas growing. This is the Polynesian way of doing it. I would like to suggest that you get Herman Meville's Book Typee and read directions there or as follows,.
Afer killing the pig you must gut it and then hold over an open fire to burn off all the hair etc. Then throuroughly wash it.
Then you must dig a pit, (where it is legal to do so )
In this pit ;you will place rocks which will then be heated as hot (2000 degrees if possible ) as they can be gotten from an open fire or fire pit. Lava Rocks as from a Volcano are preferable for this but River Rocks can be used.
Now using layers of Banana Leaves around the pig tying them if necessary and add many more layers.(to prevent sand etc from getting on the roast )
Place the pig over the hot rocks and cover with earth, and sand and leave for about 8 hours. What comes out is meat that will melt in your mouth that is very tender.
Plan on spending two days to do this. The most time is spent getting the rocks hot. if they are not hot enough the whole thing will be a failure. A more
modern adaptation of this is to heat the rocks (preferably Lava Rocks) over a gas grill (take a 100 gal drum and split in halve and place across it burners which on top of will be a grill on which you place rocks) or in an oven. You will have to use smaller rocks(=quicker loss of heat) and also have a method of moving them to the beach pit SAFELY so you do not get burned or set something on fire where you again heat them over the fire pit.(this takes care of any loss of heat in transit). Rocks should be hot enough after 8-16 hours. Using the Gas Grill method---time can be reduced somewhat but remember you need many many rocks and the large rocks are preferable to smaller ones.)
While you are roasting the pig this way you can also add some other things to be cooked theis way.

Dig a pit in the sand, start fire in the bottom, let burn down till just coals. Place a few large rocks(if available) directly on the coals, or If you have a large bbq rack that works well also. Cover the coals with damp banana or palm leaves,which can be purchased at most upscale markets. Put the whole pig in the pit, cover with the same wet banana leaves, making sure you completely cover the pig, leaving no gaps. Fill the pit with the sand you dug out. Leave for 5-6 hours, then dig up, should be delicious.
