This kanji is used about 70% of the time here in Japan.
"The first "Su" (alternate readings: Kotobuki / Ju) is only employed by its phonetic sound of 'Su' and the implied meanings of happiness and congratulation in its kanji character, and the second "Shi" generally means to preside something. All of tow characters just came from their phonetic equivalences (phonetically transliterated,) and people of the sushi industry have wanted to be and drawn up an auspiciousness and good luck from these characters. More than 50% of sushi restaurants are incorporating this, tow characters expression, in their shops and trade names today."
