If your computer DIES, you lose them anyway, SO back them up.
In general, your photos should be in the MY PICTURES section of your My Documents section. So if they are NOT there, then MOVE them.
Generally, photos and other USER files are not deleted when you uninstall the program.

Save all your pictures to a new folder on your desktop then you can delete the Epson software.
Another suggestion is to download and install Picasa2 from Google.
Then run Picasa2, it will search your computer, collect the pictures that it finds and store them in its own library.
Picasa2 is an excellent photo program and it is free.
PS: You may be suprised by the pictures it finds.

In what format do you have your pictures saved? If they're saved in something only the epson software can read, then I'd say yes. If they're saved any other way, you should be able to move them to a different directory and view them with a different type of software..

I will let you know what happened to me, when I deleted my epson program(s) all of my photographs where sent to another file called pictures, where all of my photos are stored automatically. It was the same when I deleted a program from kodak.

No you won't lose the pictures and other applications will allow you to see them still if you know the exact path to the folder they're stored in.
