You can either use balsamic or aged red wine vinegar. I also really like using sherry vinegar. Stay away from plain white distilled vinegar.

In Sicily we always used the vinegar from the paletto olives.
My aunt would make her own vinegar and age it in the cellar.
In my opinion here is no true Italian dressing made any other way.
The Sicilians have a way of saying it "accendere i fari" which
translates as the only way.

Red wine or White Vinegar is best, I have used apple cider and can't really tell the difference. Olive oil virgin the better or canola if on a diet.

Depends on how you want it to taste. Red Whine vinegar is the best, but you can also use white vinegar

I use Balsamic, Red Wine, Sherry, Rice Wine, sometimes I use fresh squeezed lemon or lime juice which is really a nice change.
