I LOVE fried potatoes and onion made in a cast iron skillet. Some fall apart easier than others. Which ones work best for you?

Idahos and russets are too dry IMHO. I prefer red potatoes or yellow waxy potatoes. They have a better texture for skillet frying and just taste sooooooo good.

BTW, did you ever try grilling them. Make them up the same way, but wrap in heavy aluminum foil and pop on the grill next to your meat. EVEN BETTER than pan fried!!!

Russet. You can either fry them raw or like the other person said, use leftover baked potatoes. If you don't have any leftovers, you can prick them and put them in the microwave for a few minutes. I love them too...you made me hungry for them!!

the best fried potatoes are leftover baked potatoes cold from the fridge, I make extras just for that purpose.

we love to use the small baby red potatoes for frying. we leave the skins on and add a little of garlic and butter to the pan...Delicious!

i like red seam to have better flavor and dont take as long to cook
