Portable DVD/CD player and some good tunes or a movie. Make sure you have headphones so you don't disturb anyone in the car. Some people I know read a book in the car. When we were children my father used to let us sit in the passenger seat and "navigate" with a map. He would take a map and mark the route we were using. We would follow along on the map and give him directions when needed.

One game is connections. Name an actor. The other person has to name a movie they were in. The next person has to name another actor that was in that movie. Then you name an actor from that movie. So on and so on. (You play it like "ghost", but we use the word "movie".)
Make up phrases from the initials on license plates.
