Ive got about 4 small steaks in a ziplock bag soaked in Lawry's 30-minute Hawaaiin (I cant spell that) marinade. I thought I was having company the next day, but it didnt work out. How long before they go bad since they are in the fridge and not the freezer?

Raw meat generally takes no more than 24 hours to marinade in the fridge. As a general rule, more than that and the meat begins to breakdown. Most marinades have a combination of sweet and citric or acid components. You can even partially cook meat in a mostly acidic marinade. What that means, regardless of type of meat, is the fibers of the muscles begin to soften and separate. Good for tender meat the next day, bad after that, because it's mush. Since you said your steaks were small, I would guess that if they've been marinating longer than 24 hours, I wouldn't risk it. Of course, I don't know which cut of meat you have or how cold your keep your fridge. If you prepared the steaks yesterday, you're probably cool. Good luck!

The rule of thumb is 24 hours but I have had chicken in marinade for a couple of days and it's been fine. Just make sure you cook it thoroughly! Something that works well for me is to put the chicken and marinade in a ziplock bag and freeze it as soon as I buy it. When I'm ready to cook it, I throw it in the oven. The marinade makes it very tender and it saves the problem of planning to cook, running out of time and having food go bad.

It depends on what's in the marinade and when you got the steaks. If there's some kind of acid like lemon juice or vinegar, up to a week. If you just bought the steaks, whatever was on the package sell date or no more than 2 days after. If they were frozen, between 3 and 5 days. You don't want to push the envelope. It's better to be safe than sorry.

I have left my steaks marinating for over a week before I cooked them. They were the best steaks ever. I suggest at least 5 days no more then 7.
