Do you have an easy recpie for zucchini / I've fixed it many ways but i'm still collecting more recpies for it as well as spinich,broclic,squash and any fresh garden vegetable///

Fresh veggies rule!

I cook zucchini with onions, garlic, and either tomatoes or tomato sauce. Another way is with chicken and either bow tie or penne pasta and no tomato products. Also leave out the pasta and serve it over basmati or thai rice.

Favorite way to eat spinach is in a salad with red onion, walnuts, bleu cheese, cranberries, and peanut vinaigrette or simply sauteed with a little butter, olive oil, salt, pepper, and nutmeg.

Broccoli, I like the crowns steamed, plain with nothing else.

I cook other squash the same as zucchini. Sometimes mix several squash for casserole.

We love eating from our garden. Here is a great simple Zuchinni recipie.

Shread the Zuchinni (1 large)
Mix with beaten 2 eggs.

Pour into a frying pan and brown.

We used this as a hash brown subsitute when we were doing low-carb.

You can always make and freeze zucchini bread as well.

You can take all of the goodies and pickle them!

I grow a nice size garden every year. I enjoy eating the veggies. I eat a lot of green salads where everything comes out of the garden except the dressing.

There's nothing like good fresh veggies. Take some Vidalia onions, new red potatoes, and summer squash, cut it all up, season with salt, pepper and real butter, then wrap in aluminum foil and grill until tender. awesome.

Slice zuchini thinly about 1/4 inch longwise, soak in cold water with a tsp. each of sugar and salt for about 2 hrs, use instead of noodles in lasagna.
