It depends on which line you're using and which station. On Sunday most central London stations have the last train leaving around midnight. The first trains start at around 5.30am, but again it depends on the station.

Check http://www.tfl.gov.uk/tube/travelinfo/firstandlast/?line=all for exact times for your station.
