The main ingredient is a chemical called 2-phenylethanol. Different types of roses smell different from others due to other ingredients. Perfumes that smell likes roses have phenylethanol in them. Roses also have geraniol. By the way, just like there are three primary colors, at least eight primary odors have been discovered.

Most pleasant smelling odors are called esters. For instance, a compound ending in -ate is an ester, here are some examples:
Ethyl Formate smells like rum
Ethyl Acetate smells like nail polish remover
Pentyl Acetate smells like bananna
Ethyl & Pently are both alcohols that in the laboratory can form most odors while using a carboxylic acid in the process of creating an ester.

Actually, when you smell something you have a tiny microscopic particle of it in your nostrils. I am not sure about the chemical though.
