Country Meatloaf
2 tablespoons Canola or other vegetable oil
1 large onion, chopped
1 celery stalk, finely chopped
2 minced garlic or 1/4 teaspoon garlic powder
3 white or whole wheat bread slices or equal amount of seasoned bread crumbs
2 pounds lean ground beef or turkey or pork or mixture of all
1 medium carrot, finely shredded
8 oz Monterey Jack cheese, shredded
1-1/2 teaspoon salt
1/4 teaspoon ground red cayenne pepper
1/2 teaspoon oregano
1 egg, beaten
8 oz can tomato sauce
1 tablespoons light brown sugar
1 tablespoons cider vinegar
1 tablespoon prepared mustard
In large saucepan over medium heat, heat oil. To hot oil add the chopped onion and celery. Cook about 8 minutes, stirring occasionally. Add garlic, cook another 2 minutes. Into a food processor or blender, put in bread slices and process to coarse crumbs. (If using ground turkey, I use only 2 slices of bread.) In large bowl add onion, celery, garlic mixture to bread crumbs and mix well. To the bread and onion mixture add 6 oz of the cheddar cheese., ground meat, shredded carrot, salt, pepper, oregano, egg, brown sugar, vinegar, mustard, and half of the tomato sauce. Mix thoroughly. (hands do it best). In a 12x8 inch baking dish or loaf pan, with hands shape ground beef mixture into loaf shape, about 8x4 inches. Set aside. Sprinkle remaining cheddar cheese over top. Spoon over remaining tomato sauce on top of meat loaf. Bake in 350 deg F. oven for 1-1/2 hours. Serve meat loaf warm or cover and refrigerate to serve cold.
Tasty Meatloaf
1-1/2 pounds lean ground beef
1 cup burgundy wine
1/4 teaspoon dried sage
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1 tablespoon Worchestershire sauce
3 slices bread, torn into small pieces
1 egg
2 cloves garlic, minced
1 small onion chopped
1 4 ounce can sliced mushrooms, drained
2 tablespoons brown sugar, packed
1/3 cup catsup
1/2 teaspoon ground ginger
1/2 teaspoon garlic salt
2 teablespoons soy sauce
1 teaspoon dry mustard
Heat oven to 350 F. Mix beef, wine, sage, thyme, salt, 1/2 teaspoon dry mustard, pepper, Worchestershire sauce, bread, egg, galic, onion, and mushrooms together. Spread mixture in a 8-1/2x4-1/2x2-1/2 inch or 9x5x2 inch loaf pan. Mix brown sugar, catsup, ginger, garlic salt, soy sauce, and 1 teaspoon dry mustard together in a small bowl. Mix well. Spread sauce over meatloaf. Bake for 1 to 1-1/4 hours or until done.

MOM'S MEATLOAF
Ingredients needed:
* 2 teaspoons butter
* 3/4 pound lean ground beef
* 1/4 pound ground pork
* 1 cup minced onions
* 1/2 cup green bell peppers
* 1 tablespoon chopped garlic
* 2 eggs
* 1/2 cup heavy cream
* 3/4 to 1 cup bread crumbs
* Salt and freshly ground black pepper
* 2 cups veal or beef stock
* 2 tablespoons all-purpose flour
* 2 tablespoons water
Preheat the oven to 350 degrees.
Grease a roasting pan with the butter. Combine the beef, pork, onions, bell peppers, garlic, eggs, cream and bread crumbs in a large mixing bowl. Blend well. Season with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and bake for about 1 to 1 1/2 hours, bating occasionally with the pan juices. Remove from the oven. Carefully transfer the meatloaf to a platter. Put the roasting pan on the stove over high heat. In a small bowl, whisk together the flour and the water. Add to the pan and whisk to blend. Cook, stirring constantly, until the mixture thickens.
Season the gravy with salt and pepper to taste. Pour over the meatloaf and serve. You can keep the meatloaf in the refrigerator for three to four days.
Make 4 to 6 large servings

1 pound ground beef
1 pound ground veal or pork (personally prefer veal)
1/2 pound breakfast sausage
2 tsp minced garlic or 4 cloves minced roasted garlic
1/2 cup fresh chopped parsley
1 yellow onion, minced
1-1/2 cups dried Italian bread crumbs
1 tsp dried oregano or 2 fresh springs stripped and finely chopped
1 tsp dried basil or 4 leaves fresh basil finely chopped
2 tsp salt
2 tsp fresh ground pepper
2 eggs
2T milk
3/4 cup ketcup, plus 1/4 cup for the top.
Mix together all the dry ingredients and herbs. Then mix together the meats. Use your hands and mix in the ketchup, milk, eggs and onion. Work meat mix into the dry ingredients. Shape into a loaf and bake covered at 350 for appx 50 mins. Then take the foil covering off and spread on ketchup or BBQ sauce for another 15-20 mins.
-OR- Instead of baking, shape into hamburger patties and grill. After you've cooked on the first side, flip and put a squirt of either ketchup or BBQ sauce on. Cover grill and let cook through. Phenomenal!!!

Meatloaf
2.5 - 5lbs. hamburger or ground turkey (depends on how many you're feeding)
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed
Topping
1 can tomato paste and 1/2 can water, mixed
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, and pork rinds. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.
Harley Davidson Cafe Homestyle Meatloaf
1/2 pound bacon
1 cup chopped onion
1 cup chopped celery
3/4 tablespoon black pepper
3/4 tablespoon onion powder
1 1/2 tablespoons dried thyme

1 1/2 tablespoons dry mustard
1 1/2 tablespoons paprika
3/4 tablespoon garlic powder
1 cup tomato juice
3/4 cup evaporated milk
2 cups dry bread crumbs
4 eggs
5 pounds ground meat
Preheat oven to 450 degrees F. Cook bacon in pan. Remove bacon and chop. Leave drippings in pan and add onion and celery. Sauté (but do not brown) onion and celery. Add pepper, onion powder, thyme, salt, mustard, paprika and garlic powder; cook for 10 minutes. Remove from heat; add tomato juice and evaporated milk. Mix bread crumbs with eggs and add to ground meat. Add spice mixture and bacon to meat and mix gently. Place mixture in 1 large loaf pan or individual loaf pans. Bake until done, about 30 to 40 minutes, or until internal temperature reaches 160 degrees F on a meat or instant-read thermometer.

I use a standard meatloaf recipe and spice it up by 'burying' hardboiled eggs inside before baking the meatloaf...5-10 minutes before it's done, I spread ketchup, brownsugar, mustard (mixed well) as a glaze on top...voila...it's a great way to 'jazz up' ordinary meatloaf.

Rich's spiced meatloaf recipe.
you will need...
2lbs of ground beef
2 large eggs
1 bottle of your favorite BBQ sauce
Seasoned salt, 2 tbsp
Onion Powder, 2 tbsp
1.2 lb of precooked bacon
1 package of shredded sharp cheddar cheese.
1 1/2 cup italian bread crumbs.
Preheat Oven to 350
Mix Ground Beef, Seasoned Salt, Eggs, bread crumbs, and Onion powder. Divide mixture in half.
Place one half of mixture into a pre greased loaf pan (use spray grease, like PAM, it's faster.) Press down to fill surface of pan.
Place half of the precooked bacon on top of mixture patty. Liberally deploy half of the cheese, and pour on BBQ sauce to taste.
Place second half of mixture on top of this. Add another layer of cheese, Bacone and BBQ sauce (this is important. Make sure to completely cover the cheese with the BBQ sauce or it will dry out and burn. Do not skimp on BBQ sauce on the upper level. Place rmeaining bacon on top.
Bake at 350 for 90 minutes, serves 3-4
Option...
You can also mix in a cup of precooked white rice if you want a bit more texture.

MIX TOGETHER AND FORM INTO A LOAF.
SAUCE:
1 CUP KETCHUP
1 TEASPOON BBQ SAUCE
1/2 CUP BROWN SUGAR
1/4 CUP CHOPPED ONIONS
1 TEASPOON GARLIC POWDER.
MIX TOGETHER AND POUR OVER MEATLOAF. COVER WITH FOIL AND BAKE 350* FOR 1 HOUR. (I HAVE TO BAKE THIS FOR 1 1/2 HOURS IN MY OVEN. SO CHECK BEFORE TAKING IT OUT)
