I don't like to just fry up potatoes. They taste good but very unhealthy in all that oil. I boil them whole. Then refrigerate them til cold. The skin will just peel off. Then you slice them. Put a pat of margarine or butter in a skillet and melt it til bubbling. Add sliced potatoes, cook on one side until you see the golden browning. Turn and repeat on other side. You can add chopped onions and bell peppers to the potatoes for more flavor when cooking. Season with salt and pepper. You can also add a garlic powder before cooking for more flavor. For extra spicy try lawrys hot before cooking as well. MMMMmmm not as greasy and oh so good.

Recipe for Home Fries

Ingredients:

6 Medium Idaho Potatoes, Previously Baked
1 Large Onion
6 Strips Bacon
4 Mushrooms, sliced
Sea Salt
Pepper
Paprika
Garlic
Rice Wine Vinegar

Cook bacon till brown in large frying pan. Remove bacon from pan and set aside. Remove the pan from the fire, and let the oil cool a bit. Slice the potatoes, skins and all. Chop up your onion and mushrooms. Put potatoes, mushrooms and onions in the pan with the bacon grease and put the pan back on the burner at medium low heat. Sprinkle with salt, pepper and paprika. Chop up 1 garlic clove and mix in. Add a couple shakes of rice wine vinegar and mix well. Mix and chop up the potato slices while cooking. Cook for about 8-10 minutes on medium low-add the bacon and mix well. Don't leave the kitchen-this need frequent turning to prevent burning. A nice hearty meal for a cold morning! Serve with Catsup. This makes about 4 large servings. Enjoy!

I think that baking the Idaho Potatoes makes this a good dish. The potatoes were made about 3 days before I made the homefries. (kept in refrigerator of course) I have tried different methods, different potatoes, but this recipe was give a whopping thumbs up! Great Homefries for Breakfast or anytime!

Well, first I peel some potatoes, then I slice them into thin rounds- if you're picky you can use a mandoline, but I just use a santoku knife because it releases the potatoes better- they don't stick to that style knife as bad. I try to aim for about 1/8 inch. then I toss them with vegetable oil and salt and pepper- or montreal steak seasoning- both are good. Use a big bowl and get each slice coated well. Preheat your skillet to medium hi and do them in batches, frying until golden on all sides. I say do them in batches because you want a thin layer of potatoes so they get crispy. Put the cooked ones on paper towels and continue frying till all are cooked, then place them on a baking sheet in a warm oven until the rest of your breakfast is done. Happy eating!

Peel and dice about 4 medium potatoes. Oil a cast iron or heavy bottomed skillet, about 2-3 tbsp. of oil. Allow pan to get hot, place potatoes in pan. Place lid on potatoes for the first few minutes, then stir occassionally to keep from burning. Allow potatoes to brown evenly and become fork tender. Salt and pepper before serving.

Easy, easy, easy and cooks in just a minute or two because the potatoe is already cooked.... and you don't have the 'STARCHY" taste.

Use left over baked potatoes or microwave potatoes for a few minutes. Cut into country cubes and fry in oil with a little salt and pepper, maybe some garlic powder.

If you want hash browns, get softer potatos (like Yukon gold), and shred them (raw) using a coarse cheese grater. Then you put salt and pepper on them (some people like some diced onion and cheddar cheese in there too) and fry them in a pan in hot oil until they're a little crisp. They're delicious that way, with no more spice needed. I like to sprinkle a little paprika on at the end to garnish and for just a little extra flavor and color.

peel and cut some potatoes as many as you need.
a small onion chopped
green pepper chopped
preheat some oil in a frying pan
toss in the rest along with salt and pepper
cook until tender
i make em once a week!
