Chicken and Cucumbers
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream.
Meatloaf
2.5 lbs. hamburger or ground turkey
1/2 cup crushed pork rinds
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed
Topping
1 can tomato paste and 1/2 can water, mixed
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, and pork rinds. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees. Serve with Salad.
Fragrant Lemon Chicken
1 apple - peeled, cored and quartered
1 stalk celery with leaves, chopped
1 (3 pound) whole chicken
salt to taste
ground black pepper to taste
1 onion, chopped
1/2 teaspoon dried rosemary, crushed
1 lemon, zested and juiced
Rub salt and pepper into the skin of the chicken, and then place apple and celery inside the chicken. Place chicken in slow cooker. Sprinkle chopped onion, rosemary, and lemon juice and zest over chicken. Pour 1 cup hot water into the slow cooker. Cover, and cook on High for 1 hour. Switch to Low, and cook for 6 to 8 hours, basting several times.

yummy cauliflower.
large cauliflower
1/2 stick butter
cup to cup &1/2 of shredded chedder or colby jack
sour cream to preference
boil the cauliflower-drain water
smash w/potato masher along w/butter. add in cheese.
salt and pepper to taste.
top w/dollup of sour cream or w/o.
we eat this all the time.

Taco soup
2lb ground beef brown with diced onion. Drain and add 1can corn
1can mexican style beans
1can tomatoe sauce
2pkg. dry ranch party mix.
about 2cups water depending if you want it thick or soupy
1pkg taco seasoning i use 2 it tastes better to me.
let cook on med heat for about 15 min and reduce to simmer..for 10min.
add cheese or lettuce on top is great !
you can also add a can of rotel if you like it spicy! or diced tomatoes.

Artichokes are good. Hamburger patty and put cheese inside. Big salad with hard boiled eggs, chicken breast, olives. Low carb is hard for me cause I LOVE BREAD.
