That would be due to the fact that the nose defines bad smells, such as that of vomit, according to whether it would be unsafe to consume or come in contact with them. Considering all cheese is actually mold cultures, it is no surprise your nose tells you to avoid a potentially hazardous organized growth of fungus.

In fact, It smells differently to each individual.
To some, it may not smell so good at first but when you get use to it, you will actually get to like the smell!

I work at an italian restaurant and occasionally have to work the grating machine. I honestly don't think it smells that bad.
