Thanks for the replies. Cos i'm not so into making cake. I always thought the cream of the cake is frosting. So is there any fresh cream recipe to apply on the cake that you guys can share?

Thanks for all the butter cream icing recipies. I've tried, it works.
But was wondering whether i can use whipped cream to cover the cake because i wanted a light and less greasy cream.
will the whipped cream started to melt cos the cake has to prepare like a day before.

beat cream cheese and powdered sugar together!! Thats it...if you want you could add food coloring.

This is the recipe I use when I decorate cakes.
It's a standard Buttercream Icing.

1/2 cup shortening
1/2 cup butter (softened) (or margarine) (or more shortening - but you'll need to add some butter flavoring! it's also a bit more greasy w/ all shortening)
1 tsp Vanilla (toss in a little almond too if you like - or whatever other flavor turns you on! I've become fond of the 'Vanilla Butternut' flavoring - but it all depends on your personal taste.)

Cream together.

Add 4 Cups *sifted powdered sugar. 1 cup at a time. Let each cup mix in before adding more.
Add 2 Tbs. milk. Mix the milk in slowly, then turn your mixer up on high and let it just run about 5 minutes.

* I don't always sift my sugar - if it's looking pretty lumpy - sift it!)

Be sure you let your mixer really run on high for several minutes. This is going to help beat your icing to make it more fluffy. You might find adding just a tiny bit more milk might make it more fluffy. It will also spread in a more creamy manner. Just don't put too much milk - then it becomes runny!

I would probably buy one can of a chocolate fugdy icing of some sort to make the racket strings with. But that's just me. ;-)

Can you use whipped cream - Yes you can! Make sure the cake is cool before you start. Keep the cake cool after the ice it. Eat quickly - don't let it sit around for any length of time. If you like the whipped icing at the grocery stores it is different than just regular whipped cream. It's a little more stable. (Don't know the recipe for that - it comes in BIG cartons and is whipped there at the bakery.) It need to be kept refrigerated, too. But it does look more like icing that just cool whip - which is going to look just like cool whip.

Baker's Frosting

2 1/2 teaspoons flour
1/2 cup sugar
1/2 cup milk
1 cup powdered sugar
1/2 cup solid shortening
1/4 teaspoon salt
1 teaspoon vanilla
2 cups

1. On med. heat, cook flour, sugar, and milk until thickened.
2. Let cool.
3. Add powdered sugar, shortning, salt and vanilla.
4. Beat until creamy and smooth.

Do you mean a "creamed frosting"...like this:

FROSTING
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 tablespoon vanilla extract
1 (16 ounce) package powdered sugar, sifted

I don't quite understand what you mean by "I always thought the cream of the cake is the frosting?????"

3/4 cup milk
1/4 cup flour
cook until it forms a thick paste, set aside to let cool completely.

1/2 cup shortening & 1/2 cup butter or margarine ( or use 1 cup butter flavored crisco).
3/4 cup sugar
1 tsp. vanilla (can use other flavorings if desired)

whip until light and fluffy about 5 minutes (the longer you whip this the fluffier it gets. Mix in the cooked paste and continue to whip. This is a very light frosting and does not dry out.

You can use this for a filling for cream puffs.

This stays a light and fluffy frosting

The simplest is going to the baking isle and getting icing in the can. They are located above the cake mixes. But here is a simple recipe that has been around for over 60 years.
2 cups powdered sugar, 2 Tbs. shortening, and a teaspoon of milk until you have the consistency of frosting you desire. Add vanilla and food coloring if desired.

Quick and Easy Powdered Sugar Icing

2 cups powdered sugar (sifted)
1/2 teaspoon vanilla
2 tablespoons milk


Mix the powdered sugar with the vanilla and milk. Then add more milk a bit at a time until it is thin enough to drizzle over a cake. Once you've iced your cake, it's best to let it stand for one or two hours.


To make chocolate icing, add two tablespoons cocoa powder when you mix the powdered sugar and follow the rest of the recipe above.

Thick Vanilla Frosting


1 cup shortening
2 teaspoons vanilla
4 cups powdered sugar (sifted)
4 tablespoons milk


Beat together shortening and vanilla for 30 seconds medium speed with an electric mixer. Add 2 cups of powdered sugar a bit at a time while beating. Then add 2 tablespoons milk. Slowly add in the rest of the powdered sugar and the rest of the milk until you get the right thickness for your frosting.

Cream Cheese Frosting


1 6 ounce package cream cheese
2 teaspoons vanilla
1/2 cup butter
4 cups powdered sugar (sifted)


Beat together cream cheese, vanilla, and butter until fluffy. Slowly add powdered sugar 1/2 cup at a time until the frosting is the right thickness to spread on cake. Keep in the refrigerator until serving.


The "tangy" cream cheese frosting flavor is a real hit on top of all kinds of cakes.



Chocolate Butter Frosting


1/2 cup butter
1/4 cup cocoa powder
1/3 cup milk
2 cups powdered sugar (sifted)
1/2 cup chopped nuts (pecans are nice)


Heat butter, cocoa, and milk and bring to a boil. Add powdered sugar and beat until nice and smooth. Add chopped nuts and stir.

Peanut Butter Frosting


2 tablespoons butter
1/2 cup evaporated milk
1 cup sugar
1/2 cup peanut butter (smooth or crunchy)
1 teaspoon vanilla


Heat butter, milk and sugar and boil for 2 minutes. Add peanut butter and vanilla and stir until smooth.

When decorating cakes, I've found this icing (frosting) recipe to be the easiest and the best tasting! It's the perfect blend of sweetness and creaminess -- your darling will love it!

I cup solid white vegetable shortening (like Crisco)
1 teaspoon clear flavoring (vanilla, butter or almond) Or you can use any combination to suit your taste. I like to use a tsp of butter and a tsp of vanilla.
2 tablespoons water
1 pound (approximately four cups) pure cane confectioner's sugar (10x)
1 tablespoon meringue powder
a pinch of salt

Cream shortening, flavorings and water. Add dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together. Blend an additional minute or so, until creamy.

This recipe will give you a stiff consistency perfect for making flowers and other cake decorations.

Add one teaspoon water to each cup of stiff consistency icing to make it a medium consistency. Medium icing is perfect for making cake borders.

Add two teaspoons of water for each cup of stiff consistency icing to make it a thin consistency. Thin is perfect for writing and frosting the cake.

simple Buttercream Recipe

1/4 cup of Crisco
2 lb. of Powdered Sugar
1/2 cup of water
1/2 tsp. vanilla extract
1/2 tsp. butter extract
1/2 tsp. almond extract
1/2 tsp. salt

Beat crisco, vanilla, butter, almond and salt together. Add powdered sugar and water alternating to the cream. Then if you want add food colorings. Thats it. Simple huh?
You dont even have to keep this in the fridge, it lasts for 3-4 months in a tight sealed container. Just mix well when going to use again.

Nothing to worry. Now a days making a cake become very easy. Purchase a pocket of Cake masala, tared lt, pour into a frypaan and just boil lt for few minutes. Take out from stove put into a deep freezer for few minutes. Your delicious cake is absoluyely ready to eat.

EASY FROSTING FOR 9 X 13 INCH CAKE

1 c. milk
1 tbsp. cornstarch
1 c. sugar
1/2 c. butter (1 stick) or 1/3 c. shortening

Add cornstarch to milk and cook on low until thick. Set aside and cool. Beat butter or shortening, add sugar and beat until creamy. Add milk mixture and beat until creamy. Spread on cake.

You can use a cool whip straight from the container and just spread it on. IT taste great. Just make sure you refrigerate it.
