The way to convert between the two is by density - how much a certain volume weighs. So, for item X, it might weigh 100 grams per tablespoon, whereas item Y weighs 50. To make a substitute for buttermilk. Put 1 tablespoon (15 mls) of vinegar into your one cup measuring cup and then fill the rest of the cup with milk. For the other 1/2 cup then put 1 and one half teaspoons of vinegar into the bottom of your half cup measuring cup and fill the rest of that 1/2 cup with milk.
