I just opened a container of parmesan cheese and found out that today is the expiration date. How long could I keep it?

The expiration date is a guide. It will still be good LONG after that. The FDA forces companys to put that on there. It is also supposed to be the "Best if used before" date.
Don't worry. If it's the grated Parmesan it will still be good when you use the last of it. When REAL cheese molds just cut off the molded part (making sure you get ALL of it) and the rest is still good.

I imagine that the expiration date is more of a "best tasting" date. Most food companies guarantee a good taste or your money back up until a certain date from manufacturing. Commercially produced parmesan cheese (such as Kraft) is a very dry and salty product so the opportunity for spoilage is limited.

I don't know the official answer on this, but I know from personal experience that I have kept Parmesan way past it's expiration date without any problem. (I even had a big one that I got from the warehouse club that I kept unrefrigerated & it was OK). I think like any other cheese, you just need to get rid of it if it develops mold.

Seriously, if you keep it wrapped tightly with saran wrap and in the fridge, it's fine. I was given a big block of white American cheese about a year ago, and i keep it tightly wrapped in saran wrap plus a ziploc bag that I always push all the air out of before sealing. It's not moldy, and it tastes fine.

Cheese is just really old milk anyway... and some of the best and most expensive cheeses are aged for years.

Most people have never learned that cheese molds and gets richer as it does. Expiration date? I never go by that. If you pull a brick of cheese out of the fridge that has mold all over it.... cut the mold off and you've got some of the most delicious cheese you've ever eaten.

i think as long as you keep it wrapped and chilled properly, you should have no problems. Remembering that cheese is made of cultures anyway, the date is more of a sell by, then eat by date. and with alot of cheese, the more mature it gets, the more developed the flavor is. If it tastes funny or had mold then you need to discard it.

its a big cheese after opening, i covered w/ foil paper & keep it to refrigerator ... Atlas! still sealed in freshness ^_^

at least a month + , mine tastes fine but doesnt last more than 1 month lol
