Make your own crackers, people are always impressed by this!
Homemade Oyster Crackers
Courtesy of Tom Berry, Temple Bar Cambridge
Yield: 5-7 Dozen
1 2/3 cups cake flour
1 cup all purpose flour
1 tsp salt
1 stick chilled, unsalted butter, cut into cubes
1 package active dry yeast
1/4 tsp sugar
½ cup warm water (105 -115)
Method:
Preheat oven to 375 F.
In a small bowl, mix together the warm water, yeast and sugar. In a food processor with a metal blade, add both flours and blend for 10 seconds. Add the separated butter pieces and puree for 20 seconds until mealy in texture. With the processor running, pour the yeast mixture into the bowl in a steady stream. Process for about 2 minutes. The dough should be pulling from the side of the bowl. Add a few drops of water if the dough looks too dry.
Turn the dough onto a floured table and roll out as thin as possible into a rectangle. Fold each long side to the center and then fold each end to the center to form a smaller rectangle. Repeat rolling and folding twice more, adding flour as needed to prevent sticking.
Roll the dough into a 1/8” thick rectangle and cut out the crackers with a round or octagon cutter. Place on a greased sheet tray ½ inch apart and pierce each cracker once in the center with a fork. Bake in the oven for 15-20 minutes until golden brown. Cool on racks.
