I don't think I know all types, but I'll try to sum all the ones I know:
- electrical engineer: you work with electric systems, for example in cars.
- electronic engineer: you work with electronics (transistors and micro-chips) like in making computer hardware.
- civil engineer: you design and construct roads, buildings, bridges, dams and tunnels, etc...
- mechanical engineer: you make machines like car engines.
- biomedical: you make artificial limbs and organ replacements and maybe lab equipment.
- genetic: modify the genes living beings e.g. to raise productivity of some crops.

Don't forget the more rare Industrial Engineer - quality control, plant design, capital investment, production control, project/engineering managment. In design, you typically tell other engineers that stuff is too expensive, and decide what assembly/part to purchase and which to make, as well as adapting and purchasing machines to suit your specifications and product development. Also used when deciding product development specifications.

What you actually DO depends on the field you go into when employed. OR you can do PE work (then you need malpractice-style insurance).

Some colleges offer a specialized MBA-type program for Industrial engineers. It helps get them into management positions coveted by the all of the other engineering branches, but IEs often end up in these positions anyway. IEs also have a good track record at getting into CEO positions. Infamously used as "downsizing" consultants.

There are many types of engineers beyond the basic three (Electrical, Civil, Mechanical). There are now Software Engineers, Petroleum Engineers, Chemical Engineers, Nuclear Engineers, and many more. To fill in the gaps, a biomedical engineer deals with medical devices and technology, like pacemakers, artificial joints and hearts, and so forth. A computer engineer is somewhat a combination between electrical engineer and software engineer. A nuclear engineer designs nuclear power plants and deals with atomic energy. A software engineer designs and writes computer software.

the types are already answered the types of engineering have already been responded. but what we do....it depends, an engineer can do many things. For example I am mechanical engineer and i have an excellent job as petroleum field engineer in one of the bigest oil well service companies. A friend of mine in mining industry, a teacher of mine in biomechanics in the best hospital at my country designing prosthesis. mechanical engineering have a lot of applications

Engineer has become a term for anyone that takes theoretical knowledge and builds practical applications with it.

Sisir has a good list, but he missed the most important branch - Chemical Engineers. (OK I'm biased)

1. aeronautical engineer: specializing in aeronautics( planes and rokets)
2. electrical engineer: spl in electrical works like generators and transmission lines
3. electronics engineer. : spl in electronics , chips and transistors.
4. communication engg: spl in communication mediums like tlephone lines, optical fibre cables, antennae etc.
5.instrumentation engg: in measuring instruments like voltmeters, multimeters, ammeters and other kinds of meters
6. mechanical engg: in mechanical bodies, like machines
7. automobile engg: spl in automobiles
8. civil engg: in construction of building, roads, dams
9. biomedical engg: in genetics
10. computer engg. in computer hardware or parts
11. software engg: in computer softwares
12. production engg; allied to mechanical but spl in production of mechanical devices.

basically there are only three engineerings
1. electrical engg
2. mechanical engg
3. civil engg

specializing in one subpart of the above or mixing of the above produce more types. the list cannot be comprehended so easily.
