EGG & CHILI CASSEROLE

10 eggs
1/2 C butter
1/2 cup flour
2 four oz. cans chopped, mild green chilis (Ortegas)
1 tsp salt
1 pt. cottage cheese
1 1/2 lb mont. jack cheese (shredded)

Grease 9x13 pan lightly.

Whip eggs until blended.

Add remaining ingredients.

Stir together.

Pour into pan.

Bake at 350 until set. (30-45 min.)

How about macaroni and cheese with broccoli spears and either a hamburger (without bun) with sauteed mushrooms on it or if you prefer non red meat, a catfish filet broiled with butter and Old Bay Seasoning, or if you prefer no meat, a tossed salad.

chicken breast cut in half then rolled, but not all the way with mushrooms and cheese inside and then with an exterior of italian bread crumb! good stuff if you do it right!
