Egg Fried Rice
Ingredients:
Rice 2 cups
Onion 1 medium
Green chillies 4
Eggs 3
Ginger Garlic paste 1 tbsp
Mint leaves 1/2 bunch
Bay leaves 3
Garam Masala Powder 1 tbsp
Vegetable Oil 3 tbsp
Salt according to taste
Coriander Leaves for garnishing
Method:
1. Fry rice in a pan for 3 minutes. Let it cool down.
2. Wash the rice and drain it
3. Add 3 cups of water and cook it.
4. Cut the onions in long slices. Split the green chilies and cut in half.
5. Boil the eggs in water until cooked well.
6. Now add the vegetable oil to skillet and after the oil is warm enough add the bayleaves, onion to the oil.
7. Stir the onions and once they turn half brown add the chillies to the oil. Stir them so that they do not get sticked to the skillet. Add the ginger / garlic paste and stir well.
8. Cut the cooked eggs into long slices. Add the egg pieces and stir well.
9. After 4 minutes add the garam masala and stir for mixing properly.
10. Leave it on heat on 2 minutes and add the mint leaves before turning off the heat.
11. Now add the cooked rice and gently mix, so that that rice does not break.
Decorate with Corriander leaves and serve with any raitha.

Cook the rice first, I usually cook it until it's al dente, but is a matter of taste. Chop an onion, and prepare the veggies, can be mange tout, sugar snap peas, peas, peppers, whatever you want and have, basically all chopped up into smallish pieces. Then: Get the wok really hot. Add a splash of oil, then swish it around. Put the veggies in and start to cook. Add the rice, coat with the oil. Break an egg or more (I use 1 per person), whisk it a bit then addto wok. Stir it so everything is coated. Cook through then enjoy! My wife is Vietnamese and likes my egg fried rice, but she does hers slightly differently. Authentic Fried Rice
Ingredients
(4 servings)
2 oz Chinese barbecued pork
1/4 lb Fresh or frozen peas
2 tb Oil, preferably peanut
2 c Long-grain rice, steamed and chilled
1 ts Salt
2 Eggs; beaten
4 oz Fresh bean sprouts
GARNISH:
2 tb Finely chopped scallions
Instructions
CUT THE PORK INTO FINE DICE. Blanch the peas in a saucepan of boiling water for about 5 minutes if they are fresh or 2 minutes if they are frozen. Drain them in a colander. Heat a wok or large skillet until it is hot. Then add the oil and wait until it is almost smoking. Add the cooked rice and stir-fry it for 1 minute, and then add the barbecued pork, peas and salt. Continue to stir-fry the mixture for 5 minutes over high heat. Next add the beaten eggs and bean sprouts and continue to stir-fry for 2 minutes or until the eggs have set. Turn the mixture onto a plate and garnish it with the scallions. Serve at once, or let it cool and serve as a cold rice salad.

Fried rice works best with day old rice. (this is what restaurants use, it is a way of using up the leftover rice.) For a very basic rice:
Beat 4 eggs and scramble them in a hot pan/wok with oil until just cooked through. Remove the eggs and set aside.
In a hot wok with a Tbsp of oil(veg, canola) quickly saute 1tbsp chopped garlic and 1 tbsp minced ginger for about 30 seconds. Add the rice and start frying. Cook for 2 minutes, add a splash of soy sauce and mix in the scrambled eggs. Garnish with sliced scallions.

EASY FRIED RICE
3 c. rice, cooked
4 slices bacon, cut up - sprinkle with pepper as you fry it for a kick
3 eggs, beaten
1 lg. onion, cut up
1 sm. pkg. frozen peas and carrots, thawed
Cooking oil
Soy sauce to taste
In a wok or large frypan, heat oil. Add bacon and cook until almost crisp. Add onion and cook until tender. Push to the side and pour in eggs. Cook until set. Break up eggs and mix with bacon and onion. Add rice, carrots and peas and toss to mix. Add soy sauce to taste. Cook until heated through, tossing as you do.

What I do..is I stir fry onions and garlic with some grean peas, you could also add carrots and some cubed green peppers..add the cooked white rice mix it together and as its still hot add an egg or two...comes out sooooo awesome...:)

take cold cooked rice
fry (use an oil that likes med high heat, peanut or sesame are tasty) with green onion, peas, etc
whisk egg then add to above, keep frying + STIRRING
add soya sauce
can add any veg or cooked meat to rice part

start with cooking egg in oil or butter or both..no need to beat it. just scramble it in the pan.then start adding evrything else..garlic onions. salt, pepper, veggies sausage or ham...shoyu (soy sauce) and the rice and whatever else you may need...note: we make it when we have leftover rice ( we eat alot of steamed rice). it is really easy to make.
