Working on restoring a businesses computer systems after a fire. They are in full business mode as we build the system around, among them. Naturally you'd like to have project team, but it's seat of your pants. How can we document things quickly to a webbased system that can be dynamically updated every time a change is made.

Wiki looks promising, but I need something more "Out of the Box". From what I understand Wiki takes fair amount of configuration and we just don't need that at this time....

A wiki would be a good way to handle it.

You might also look into a hosted package like Basecamp.

I've had very good results from a program called ACT. You'll, of course have to liscence a copy to every PC that uses it but the online sync is very responsive.
