u can make tomato soup!

1 qt Tomatoes
3 sm Onions; chopped
1 pt Water
Salt & pepper to taste
Butter the size of a walnut
pn Baking soda
Soda crackers

Put tomatoes, onions and water in a kettle and
stew for about an hour. Remove from stove and
strain through a sieve. Put back into kettle and
add salt and pepper, butter, soda and milk. Bring
to a boil. Crumble in soda crackers and serve. You
could simply open a can of Campbell's, but this is
really better.

My EASY recipe for salsa: Chop up tomatoes, chilis, onions and cilantro: mix them to your individual taste. If you want the salsa hotter, add a bit of tabasco.

Gazpacho soup was invented for the summer. Refreshingly cold on hot summer days, this adaptation of the classic Spanish soup deliciously combines the best of summer vegetables. Make sure you only use the freshest, highest quality ingredients for this soup.

6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or green) seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
2 teaspoons sugar
Salt and fresh ground pepper to taste
6 or more drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice

Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.

Serves 8.

I just made this salsa...it was really good. Hope you like it.

I peeled the tomatoes and cooked them on low with about 1 1/2 cups of water until they started to break down. I used a potato masher to mash them up until it was almost like a tomato puree. I chopped one large onion , 4 jalapeno pepper (seeds removed) 3 cloves of garlic in the food processor and added it to the tomatoes. Add salt and about 2 tablespoons of tomato paste. Let simmer on low until onions and pepper are cooked down and all the flavors start to blend.
I let it set overnight. It is really good the next day and only gets better the longer it sets.
THis could also be done in the crock pot too.

Kathy depening were your at Here in the South we make a dish with rice. Cut up tomatos,add chopped onions, green peppers, orkra cook till soften serve over cooked white rice, if your not an orkra fan you can delete it, You could also can up the tomatos for use during the winter, Don't know how, They can also be frozen with a little prep involved.Hope this helps Dee

Believe it or not: You can wipe them off, and put them in an empty bread bag to freeze whole. When you need tomatoes quickly drop them in boiling water to slide the skins off , thaw them and use just like fresh, only bad thing is they aren't good for slicing but it is like having fresh year round. I've used this the past 4 years and will not can them now.

You could make some marinara, salsa, tomato salad or bruschetta topping. Just add some garlic, basil, oregano, salt and pepper for the brushcetta topping...it is really good. Oh and some EVOO (Extra virgin olive oil)

When I have tons of tomatoes. I stew them with green peppers, onions and celery. Then I put them in a freezer safe zip-lock bags and freeze them. So when ever I need stewed tomatoes, I already have them. Happy Eating!

Make a baked tomato casserole for dinner. Google the recipe. I know there is cheese and breadcrumbs involved.

make a tomato pie: in a pie shell. spread a little olive oil and layer tomatoe slices, cover with other pie shell and bake. if you want to make it scrumcious... add frozen spich or fresh leaf baby spinach and feta cheese. serve with a steak!

You can just freeze them raw and put them in recipes later.

Spaghetti sauces, soups and salsa - you can also make your own ketchup!
