I will be flying for the first time in a few weeks. I will only have carry-on baggage with me. Will I need to have my carry-on baggage checked at each airport? (I have 2 flight stops)

If it's carry on, you don't "check it". If you mean going through security (as in they are checking/looking at), no. You go through security at your departure city, when you arrive in the connection city, be sure to stay inside of the security checkpoints. If you choose to exit the secured area, you will be required to go through the security checkpoint again.

You don't say where you are leaving from or going to. The exception to the above is international travel., If you are passing through a different country, you must go through security and clear customs.

The answer in most cases is no. Just make sure you stay airside, meaning you don't leave the secure area where all of the gates are. There are some circumstances, if you have to change terminals to connect, where you have to go landside and thus clear security again. Assuming you're on one airline, and that you're not changing terminals at an airport that doesn't connect them airside (such as JFK T8&T9), you'll be fine.

If you are carrying it on, it doesn't need to be checked. When they check it they weigh it, tag it, and keep it. But you will still have to go through security screening with it.
If you check it, they will take care of getting it to your final destination even with the plane change.

The flight attendant is right, your carry on will go through the x-ray at your departure city, as long as you don't leave the sterile area your good.
