Beef Stroganoff, in its simplest form, is simply tender beef with a mushroom and sour cream sauce served over rice or noodles.
1 lb (450g) Fillet of Beef
1 1/2 Medium Onions
4 oz (100g) Closed Cap Mushrooms
1 oz (25g) Butter
1/8 Pint (75ml) Soured Cream
Salt & Pepper
Serves 2 as a Main Meal.
Slice the Beef into 2in (5cm) strips - the thickness of your finger. Slice the Onions thinly. Cut the stems off the Mushrooms and also slice thinly.
Over a low heat melt half the Butter (with a tad of Olive Oil) in a Frying Pan and add the Onions. Move around regularly until they are soft and see through. It is important that they do not burn. Add the sliced Mushrooms and toss around for a minute or so until they are soft and coated with the juices.
Spoon out the Onions and Mushrooms into a dish.
Add the remaining Butter to the Frying Pan and allow it to get very hot - so that it froths. Drop in the Beef strips and fry briskly on all sides. The Beef really needs only to be browned and not over-cooked in the middle. A couple of minutes at the most.
Tip the Onions and Mushrooms back into the Frying Pan. Season well with Salt & Pepper. Add the Soured Cream and cook at the same heat for another minute so that the Cream reduces to a syrupy consistency.
Serve at once.

I'm sure some of you may have cooked this easy version of stroganoff before, but it tastes so good and its really easy, so its great if you want a good hot meal but don't have all day to cook one.
"Stroganoff In A Hurry"
Ingredients:
1lb of ground beef (you can substitute ground pork or groud turkey if you like it better than beef)
1 Onion-white or yellow
Fresh minced garlic to taste
Cream of Mushroom soup
16 oz package of Sour Cream
Salt, Pepper, Paprika, and Dill to taste
Cooked Egg noodles (It is also good on potatoes or rice)
Brown ground beef & drain. Saute onion and garlic for a few minutes, and then add beef back in & mix the onions and beef together. Then take the cream of mushroom soup and sour cream and add them to the meat mixture, and mix untill everything is well incorporated. Add the salt, pepper, paprika and dill to taste. Let it come to a boil and then put it on low and simmer for 20-30 minutes. Serve on Egg Noodles(or whatever starch you choose).

I made it last night. Marinate small cut up pieces of beef (1.5lbs)overnight in your favorite marinade/spices. Buy a box of the beef broth. Once you brown the meat in a little oil and 1/4 cup of broth, then add the remaining broth. Add two cans of creme de leite (found in the condensed milk section of the grocery store), and a small jar of sliced mushrooms. Simmer for 30 minutes and serve over rice or noodles.

INEXPENSIVE BEEF STROGANOFF
I make this one myself, it is easy and delicious.
1 pound round steak, 1/4 inch thick
1 3-oz can B-in-B mushrooms with liquid (that means "broiled in butter" - I guess they still make them)
1 envelope dry onion soup mix
1 cup sour cream
2 tablespoons flour
Trim fat from meat and reserve; cut meat diagonally across grain in very thin strips; heat fat in skillet until have about 3 tablespoons melted fat (add butter, if necessary); remove trimmings. Brown meat and cook until tender. Add 2/3 cup water and mushrooms. Stir in soup mix. Heat to boiling. Blend sour cream and flour. Add to hot mixture. Cook until thickens (sauce will be thin); serve over noodles.
This only serves 4-6; multiply quantities, as needed.
