The best way to preserve cheese after it's been opened is to put it in an airtight container. This will prevent mold quickly. If you are going to be using it regularly, then a zip lock bag will do.
The difference between cheese and cream cheese is taste and texture. Velvetta is a processed cheese food, it's easier to melt than hard cheese. Cream cheese is also soft, but not processed, cheese and can be used to make all sorts of dishes. I use a container of cream cheese and pimento's and olives for a cracker spread. I also use it in my alfredo sauces from time to time. Mac & Cheeese with cream cheese is a nice change and I add chives for color. Kids love it too. first of all, don't touch it with your bare hands as the oils on your hands will cause mold to grow much faster. If it's shreaded cheese, dump it out of the bag rather than putting your hand it. If it's a brick, leave the wrapper on.
Always ensure that it is in an airtight container.
Soft cheeses like cream cheese and mozzarella tend to have more fat in them than hard cheeses like cheddar and parmesan so will mold easier. If you do get mold on a block of cheese, cut away at least 1 inch from the mold and it should still be safe to eat.

Cheese is one of those few foods that seem to keep forever. And is one of the few foods that if you do keep it long enough to get mold on it, it just makes it better. Cut the mold off and enjoy the rest.
As long as you keep it away from the air, like plastic wrap or zip bags it will keep for a long long time!
I have a good simple recipe for a cheese ball made with creme cheese, but can't think of any dips made with reg. cheese. Sorry!

I've found that cheese keeps longest when you put it in an apporopriately sized Ziplock bag, suck all the air out, and leave it anywhere in the refridgerator. I routinely keep large blocks of cheddar for weeks with this method. Even Mozzarella, which often spoils rapidly, can be bought in large blocks and kept fresh for weeks this way. In general, remember that blocks keep much longer than shreds, and slices fall in the middle. As for cream cheese, I have no idea.

Vinegar will keep it from molding longer then just wrapping. Moisten a paper towel with white vinegar and wrap the cheese in it. Then wrap tightly on plastic and put in a ziplock bag. You can freeze cheddar in usable amounts, the taste will be the same but the texture will change,(it gets crumbly) it works well in cooked dishes.

Seal it it a Ziploc bag, or wrap it in paper so air isn't directly on it.
Cheese gets sharper with age, so if you see mold on cheese, it doesn't mean it's gone bad, you can cut the mold off of it and what's left is still good to eat.
