Until it's done! There is nothing worse than an under cooked chicken. Try this: dip the chicken pieces in a milk-egg mixture [beat up a couple of eggs add some milk, about 1/2 cup], roll each piece in crushed CORN FLAKES & pan fry in a small amount of oil until they are slightly browned. Remove chicken from pan & place on cookie sheet; Bake chicken @ 350 degrees on middle rack for about an hour, about the last 10 minutes before you take it out of the oven, drizzle the celery & butter over browned chicken, place cookie sheet back in the oven until celery is slightly browned. It is finger lickin' great, this way! Hope you try this! It is simple; It's always a hit!

This may sound silly/obsessive, but I started buying the Banquet (pre-cooked, breaded, fried) chicken that comes in a box in the freezer section of the grocery store.
I first take out all the pieces and let them thaw to room temperature. Then I smother them in a mixture of BBQ sauce and brown sugar and toss 'em on the BBQ-grill (they will drip a little bit at first, but shouldn't effect the fire (if you BBQ over coals)). Then I cover & let them slow cook until they get caramelized and crispy all over.
The result is heavenly!
I started doing this when I was trying to emulate KFC's Honey BBQ Wings. Dare I say, this is actually a little bit better! Mmmmmmm...

marinade the chicken with this paste- 2 large onions, few cloves garlic, and an inch of garlic all pureed, and 2 tbsps of yoghurt and salt for couple of hours. then heat oil/butter add a few whole pieces of cinnamon, cardamom and cloves. add the marinated chicken, add alittle turmeric and chilli powder, then simmer for an hour, add a little water if necessary.. or else pressure cook for 5 mins. enjoy!
