All the recipe idea were great but if you want to make your salad more "interesting" it should be in presentation. Use any of the great ideas given for the salad. Depending on how much you made pack the salad in a saran wrap lined dish such as an 8" round cake pan, various sized pans, etc. Then when you get to the party unmold it onto a platter. Garnish with your chives, parsley, sliced tomato wedges, crumbled bacon, eggs, whatever. Or lightly frost it with a seasoned mayo mixture and top with above. (if you have sour cream available use it half and half with the mayo)
Years ago when I graduated from high school (MANY years ago), my mom did this in graduated layer pans and the finished product looks like a wedding cake. She "frosted" the tops of each layer and using herbs and flowers decorating the top and trailing down the sides. To this day people still remember my potato salad cake!

Simple! Make a mustard sauce to go with it
In a bowl put a teaspoon of mustard, add a little olive oil, only little sips at a time while mixing well with the mustard, keep doing it and mixing well so the sauce remains thick. Add a teaspoon of lemon juice or white vinegar, salt.pepper then mix with potatoes. Cut shives tibly and add on the top! If you have anything like anchovies in your cupboard you can add them to it but if chives are all you got! Just use them!
Makes potato sald nice and spicy!

Most people love potato salad because of it's simplicity. Don't overdo it. If you add something you'll be changing the flavor.
I have seen some people add chopped green olives which changed the flavor some and I liked it well enough.
Others mix their mayo in a bowl with some vinegar to alter the flavor.

Almost everyone has eaten potato salad and everyone who loves it has a recipe for their favorite. So, just saying, whatever your out come, the salad will be well received.
And in your attempt to " kick it up a notch..."remember, you must cook your potatoes properly. Don't over cook and undercooked potatoes are hard to digest causing stomach aches. Fork-tender is what you aim for, and when making my salad, I dice the spuds while they are slightly warm and make the salad giving the potatoes every chance to absorb some of the dressings flavor.

How about a bit of hard boiled egg? Or try some spices if you have any. Curry powder goes well in potato salad.
Another thing that i have tried recently is making with mayo and salad cream or mayo and thousand island dressing. GIves it a bit more of a zing.

CLASSIC POTATO SALAD
Servings: 8
FOR THE DRESSING:
1 cup Hellmann's mayonnaise
2 Tbsp. vinegar
1 1/2 tsp. salt
1 tsp. sugar
1/4 tsp. black pepper
FOR THE SALAD:
6 medium potatoes, peeled, cubed, and cooked
6 hard-boiled eggs, chopped
1 cup sliced celery
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/3 cup chopped gherkin pickles
1/4 cup finely chopped red onion
Combine ingredients for the dressing in a large mixing bowl.
Stir in remaining ingredients for the salad and toss gently but thoroughly to coat with sauce. Cover and chill overnight.

How about shave all your pubic hair off and sprinkle it over the top. When people ask, just show em your muff and they'll believe you.
May not make for an interesting potato salad but when you whip out your muff, will sure keep the flies off the salad!

Dill is good in potato salad . Doesn't have to be fresh , dried is fine. Red potatoes are nice too and you can leave the skins on.
