The fruit flesh of a ripe mango contains about 15% sugar, up to 1% protein, and significant amounts of vitamins A, B and C.

The mango is in the same family as poison ivy and contains urushiol, though much less than poison ivy. This one is not so useful unless you want to poison cattle they find it toxic.

It is reputed that mangos soothe the intestines, which makes them easy to digest. In India, where mangoes are the national fruit, they are thought to help stop bleeding, to strengthen the heart, and to benefit the brain.

Mangos can be used in many dishes of course including desserts or eaten just like an apple but don't try to eat that skin its not edible. Mangos can be pickled, made into chutney, green mango may be used in the sour salad called rujak. In the Philippines, unripe mango is eaten with bagoong, fermented minute shrimp paste which comes in sweet, salty and spicy flavours. You can make juices and syrups using mango and the best use I have ever found for a mango is to tenderize meats.

I thinly slice mango strips and lay them over roasts or tough cuts of beef and cook as normal and the mango juice tenderizes the meat and gives it a sweet marinade. Yum!

Mangos are full of vitamin c and are a typical fruit with carbs from the sugars.

Mango Salsa by Ellie Krieger

1 mango, peeled and diced
1/2 cup peeled, diced cucumber with seeds removed
1 tablespoon finely chopped jalapeno
1/3 cup diced red onion
1 tablespoon lime juice
1 tablespoon honey
1/3 cup roughly chopped cilantro leaves
Salt and pepper

Combine the mango, cucumber, jalapeno, red onion, lime juice, honey and cilantro leaves and mix well. Season with salt and pepper, to taste.

This is great over any fish , chicken or even just chips (Maui potato chips)

its sweet and really juicy,think rich in vit c as well..mango shake..just scrape it out and put it in the blender..put ice cubes,evaporated milk,sugar to taste and blend it or osterize till all ingredients will blend and you will have lovely mango shake that you will like especially this summer time.
