So, maybe I'm about to sound dumb here, but....I've never heard of a banana pie... Maybe it's just because I'm not very well-versed in the world of pie, but it seems to me that one needs a jucier fruit for the filling. I am both an atheist and a fan of the banana, but I don't believe that I would like to either bake or eat a banana pie because it just doesn't seem like the banana is a good choice for pie filling. Maybe I'm wrong.
To answer the question, if banana pies can indeed be baked, I'm sure an atheist who knows how to cook, can follow a recipe, and has access to bananas and pie crust, would be capable of baking one.
Added later: Are we talking about banana CREAM pie? Because I'm still a little confused... If we are in fact referring to the cream variety of the banana pie, then I think my answer still holds: an atheist schooled in the culinary arts would likely be capable of baking such a dish.
Added later than that: By chance, are you missing a space between "a" and "theist"? Because that would make more sense grammatically. My answer would still be yes, though: any theist with the will and the means is capable of baking banana pies.
Added even later: A-ha! Are you referring to that video that's been emailed around lately where some odd Australian people are explaining that the banana is proof of the existence of god? If so, then you must be implying that atheists have some sort of ideological problem with such a belief, and thus, cannot use the banana for baking. I would counter that, however, with, can theists use pineapples in baking, pies or otherwise? Because there has never been a more inconvenient fruit for a human being than a pineapple, perhaps implying that god doesn't exist. Although, I would still answer yes, a theist is capable of baking treats made of pineapples, thought they may not want to--that's a different question, though.

I am an atheist and I like my bananas separate from the pies. I like chocolate pies myself. As far as baking goes, I can't cook or bakes But I can poor a mean glass of apple juce right out of the container.

No, an atheist could never, never touch a banana. It would turn them into ashes in an instant.

A better question would be "Can a Christian bake any type of pie whatsoever?" I don't think so. How could they? The recipe is not in the Bible.

I personally can not cook worth a damn, but my brother is a chef and, if his banana bread is any indication, could probably make some damn fine pie.
