Beer and BBQ sauce overnite in the fridge. I think it's the enzymes in the beer, they tenderize the meat.

LONDON BROIL
Servings: 8 (5 1/2 oz. each)
4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard
MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade
COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.
Drain marinade from meat. Reserve marinade up to two weeks if needed.
Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.
Transfer the steak to a cutting board and let rest for 5 minutes.
Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

First, buy a tender steak. If you get a sirloin, or similar lean meat, its not going to get that tender. Try a ribeye or porterhouse.
There are some pretty good off the shelf marinades you can buy, I'd avoid the ones that have a lot of corn syrup. Something soy or vinegar based is better, but its all about what you like. I'd avoid BBQ sauce, too sweet.

there are books written on just this topic alone...the easiest marinade that seems to work on everything is simply a bottle of Italian salad dressing...
put a few holes in the meat with a fork, put in a plastic bag, then cover it with the dressing and let it sit in the fridge or cooler for at least 3 hours...overnight if you can.
it works even better if you can shake the bag around once in a while so all the meat meets the dressing. this works good with any kind of meat or chicken. Not sure about fish...never tried it.

Beer, red wine [dry/semi dry], garlic [I use garlic powder], salt, pepper, overnight in fridge -- for BBQ.
Pour or dab leftover marinade on the steaks while they are BBQing to keep them moist and add flavor.
You can also marinade for a few hours before BBQing, but overnight is best.

I've learned that the best thing in the world is Soy Sauce, you can't really even taste the fact that it is Soy Sauce. Just stab the meat a few times and pour soy sauce over it, and cook it.

It's not really about what your marinate it in. It's about using a tenderizer.And when you marinate, don't keep it in there too long, the taste can be overdone.

If you like sirloin 'Chateau Brayone'(I don't know the spelling), I love it. You use beer and soy sauce, over night, add garlic and salt and pepper.
