Pasta dishes and casseroles are good, easy beginner stuff.
For mac cheese: Cook macaroni. Slice tomatos, and buy LOTS of grates cheese (your choice of kind). Layer pasta, cheese, tomato, and sprinkled salt and pepper, in a dish. Top with more cheese. Repeat until you fill the dish. Bake in the oven until top begins to crust and brown. Voila!
If you're ready to try your hand at browning meat, look up Shepherds/Cottage Pie. Brown meat & flavor (who use worcester sauce and ketchup), make mashed potato. In a dish, put the meat on the bottom, mash on top. Cheese optional. Bake for about an hour. Reheats very nicely.
Soups and stews can also be great beginner stuff. Ancient recipe: Look at what you got, throw it in the pot!
And if you want to try for dessert, cookies and brownies are pretty reliable as long as you get them out of the oven in time.
The secret to good cooking is to follow your gut. I start by going through the spice drawer and smelling the different herbs to get a feel for what I want. Remember: You can always add more... but you can't take it out.
Avoid: Recipes involving complicated sauces, meats you don't know how to handle (uck), and expensive ingredients while you're still learning.
And when in doubt, take something you already know how to make, and play around with it. My mashed potatos win over everyone else's because I dared to put in more pepper and onion salt (and a tch more butter).
Good luck! :)

Home cooked chicken parmesan is pretty simple. Use chicken breasts, and in 3 separate bowls put bread crumbs (Italian or Japanese Panko), then in the next bowl 1-2 beaten eggs with a little water beaten in, and the last bowl should have flour seasoned with salt and pepper. Dip chicken in flour first, then egg mix, then bread crumbs and put in a skillet with hot oil to fry until golden brown. Then move the chicken breasts to a large rectangular baking pan. Place 1 thin slice of ham on each breast and then 1 slice of smoked provolone cheese on top of that. Cover all with a canned spaghetti sauce and then some grated parmesan on top of all. Bake at about 350 until hot and bubbly. About 45 minutes, give or take. Serve with fettucine alfredo. Most people are impressed by this dish and it's very simple. You can even make it when camping, by using a dutch oven for the baking time. Good luck.
Oh, and Teriyaki chicken is pretty simple, also called "Shoyu chicken" because it is one part "shoyu" also called soy sauce, to one part brown sugar, and a clove or two of garlic and some fresh or even powdered ginger, plus about a 1/2 cup water. Put ingredients in a deep sauce pan with a couple pounds of chicken thighs (breasts dry out) bone in or out, and simmer for about 45 minutes to an hour. Keep an eye on it so it doesn't boil over. Serve with Cal-Rose short grain sticky rice and your choice of vegetables.

Breakfast food is always good to learn to make. Different types of ways to fix eggs is a plus. Pancakes a definite one. I have found that pancakes turn out perfect on one of those flat griddles. Also gravy is good to learn to make--practice that. Then try things like ribs and chicken --those can be prepared in all different ways. I love to fix pork chops and meatloaf. So, think about what you like to eat and try to make what you prefer.
