I don't think Sunday is a "bad" day for a wedding, but you will have more success with an afternoon / early evening reception than a nighttime one. And yes, that will probably mean "black-tie optional" will be out of the picture.
I don't think people would find you cheap for wanting a good deal on your site, but the reality is that if you have out of town guests, they are going to have to take time off of work or whatever AFTER the wedding to accomodate travel, and that doesn't work well for some people. And there's the general issue of in-town guests have a little "too good" of a time and paying for it the next day.
What you and your fiance need to decide is what is more important to you -a Saturday evening formal wedding / reception, or booking your favored location on their terms (date/time) and saving a little money. I don't think either choice is wrong, but there are considerations with both.

I personally think saturday is a much better day to have a wedding. If you absolutely cant have it on saturday, i really honestly dont think anyone is going to think you choose that day for being cheap. Do it the day you feel is right. No matter what, your family will be there for you. I think sunday afternoon would be best though.

Sunday is not a bad day for a wedding at all - it is a wonderful day for a wedding. How formal a wedding is depends on the time of day you have it - not on which day you have it. If you are happy with the place, you go for it!

No, Sunday is perfect. It is the most realixing day of the week I've heard. And I don't see the problem with people flying home on Monday. And if they have to leave on Sunday, see if u can do it in the morning so they could go home later. And so what if people think your trying to save money. It doesn't matter what they think at all and its none of their bussiness.

Grats on choosing The Manor, it is beautiful. My fiance and I had to choose a Friday wedding and I was worried about people having to take time off of work. What it comes down to is what is most convenient for you and your fiance. The people who mean the most will make a strong effort to attend.

Why not Friday night?
Fridays are becoming more popular as the halls usually
discount on Fridays and Sundays.
If you have it lets say at six o'clock. Then your guests wouldn't have to take off from work. And it can be as formal as you like.
I work at a hotel that does weddings and have seen Friday night weddings that are just lovely.

Actually, if you're religous, a Sunday (traditionally!) is taboo because it IS considered the Christian Sabbath. However, do what you like...I think it is more relaxed now.
Even if you chose a Friday night, you have the same situation with the guests having to take off work, so don't belabor that too much - it happens. If they want to come, they'll be there.

Saturday is a good day so people can write themselves off and enjoy themselves without having to worry about work the next day.Also if you have people coming from out of town then they can be back home before the working week starts.Saturday is a more convenient day.

Sunday is a good day, Most hall's have it on Saturday, because many like to go to church on their own time and not have to go out after to party. Just remember that is a holy day and not everyone may want to go to the reception. Depending on your crowd. and depending on the religion. Like you said people work on monday, also factor that for your guests. You should think it hard on that one. I would choose Saturday.
