Ok, I have heard of putting mayo in cakes and even cookies as an alternative to butter or shortening, but to PANCAKES? The only real fat you add to pancakes is a negligible amount of melted butter and the fat that comes from the egg yolks. Where did you find a pancake recipe calling for mayo? I'd love to know...it sounds awful, but I've been surprised before...

Actually, regular mayonnaise is used quite commonly in a number of sweet baked goods, to give them more body and "oomph". It's really not that odd.
Now, on the other hand, putting something like Miracle Whip (TM) in a sweet pancake recipe would probably be disastrous.

If you're making zucchini pancakes, use 2 Tbsp mayo and 2 Tbsp sour cream in the mix.

I ad mayo to cake mix, pancake batter just lacks the eggs and seeing that mayo is eggs and oil, sure why not start with table spoon per cup of dry ingredients should make them lighter

one time when i found out that my mayo was close to expire and so i used them wherever i could...
i put 2 tablespoon of mayo to 1 cup of flour for pancake (i made them from scratch). they turned out fine. the vinegar boosted the baking soda making the pancake fluffier and the extra egg and oil in the mayo gave the pancake a bit of pillowy/marshmallow feel. you won t taste any mayonnaise in them. since this is a kind of success, i used the rest of the jar for baking muffins and cakes. good results remained.
so, i would dare say, it is fine to put mayonnaise in the production of pancakes. just don t "over-dose" :-)
