Two for you.
BAKED CATFISH
1 two-pound catfish
1/2 teaspoon garlic salt
1 medium onion (chopped)
3 fresh tomatoes (chopped) (or cup stewed tomatoes)
1/4 teaspoon thyme
1/4 cup lemon juice
1 tablespoon melted butter
3 tablespoons bacon fat
1/8 teaspoon pepper
1 green pepper (chopped)
1/2 cup water
1/4 cup bread crumbs
1 teaspoon grated lemon rind
Dress and split catfish; place in greased shallow baking dish. Sprinkle with garlic salt and pepper. Heat bacon fat in skillet; add chopped onion, chopped pepper and tomatoes. Saute for five minutes. Add thyme, lemon juice and water. Pour over fish. Combine bread crumbs, melted butter and lemon rind; sprinkle over fish in casserole. Bake (uncovered) at 350 for 45 minutes. Remove to heated platter; garnish with sprigs of parsley and lemon wedges. Serve with potato (baked in same oven heat), cabbage slaw and cornbread or hushpuppies. Serves four.
How To Fry Catfish
Though catfish can be prepared many different ways, fried is by far the
favorite of most Southerners.
Difficulty: Average
Time Required: 15 minutes
What You Need:
a.. heavy skillet
b.. 4 catfish fillets
c.. shortening
d.. shallow bowl for dredging
e.. 1/4 cup flour
Here's How:
1.. Wash four catfish fillets with cold water.
2.. Melt shortening in a large iron skillet. It should be about 1/2 inch deep.
3.. In a shallow, wide bowl, combine 1/4 cup of flour and 1 cup of white
cornmeal.
4.. Season the fillets with salt and pepper then roll in the cornmeal mixture to
coat well; gently shake off excess.
5.. When the fat is hot but not smoking (about 375 degrees F.), carefully lay the
fillets in the skillet.
6.. Fry until crisp and browned on the bottom, about 4 minutes. Turn carefully
and fry the other side.
7.. Lift out and drain on paper towels.
8.. Serve with hush puppies and lemon wedges, tartar sauce, or sauce of your
choice.
Tips:
1.. To make a thicker coating, beat 2 eggs in a shallow bowl. Dip coated fillets in
the beaten eggs then roll in the cornmeal mixture again.
2.. For spicier catfish, season with Cajun seasoning or cayenne pepper along
with the salt and pepper.

I saw this on Montel once. You can use either tilapia or salmon. Heat a pan with about a tablespoon of butter. Than when its hot throw your fish on there you should hear a sizzle. Leave on that side for 5 minutes or til golden brown. Then throw a little salt so little you cant see it. Then some pepper. Pepper is actually good for you so put as much as youd like then squeeze a lemon on the fish. Turn it over for 5 minutes. And Voila! Nice healthy, fast fish recipe. Dosent get any better than that.

Ok this is the best way I know how to make white fish. It's probably not the best for you but no frying! Ok...get a few sheets of foil (good size). Then put your fillet (preferably soul, but you can use any white fish) in the middle of the sheets. Sprinkle a good layer of salt. Then put a thick layer of mayonnaise on top of the fish. more is better best it cooks down a lot. Then put a sprinkled layer of chopped green onions (more of less depending on your taste) Next put a layer of grated Parmesan cheese on top. Fold the foil over and roll it into the middle to form a nice little packet. You can then cook it in the oven, but the BBQ works much better. Plus no one wants their oven on it the summer. Cook until done!. It's called heavenly soul.

Try seasoning with salt, pepper, dill, and olive oil. Sear in a pan on medium high heat for about 2-3 minutes per side (depending on thickness). Fish should be just starting to flake. Remove from pan and melt 2 tablespoons of butter in the pan and add 2 tablespoons of chopped tarragon. Pour over the fish and serve. Works with just about any type of fish (salmon, snapper, etc.). Don't worry about mixing these herbs. To me, tarragon and dill go well together.

Smear the steak or fillet with mayonaise and broil. The oil in the mayo keeps the fish from drying out, the salt and lemon season it and the egg makes a light golden crust. A little dill weed is nice on this or mix the mayo with a spoonful of caper juice.

Try this:
Any fish. Go get some canned crab meat.
Crab meat: Flavor with salt, pepper, lemon, butter, garlic. Wrap the crab mixture inside the filet. Bake. Also get some pineapple with chunks of orange and maybe some apple. Apple fruit mix on top of fish splash top with fresh lemon and dill.
easy, sweet and savory and all around good stuff. I think.

If you are sick of salmon then that means you are eating too much fish. It's not simply a reaction to the repetitiveness of eating fish all the time. It is your body's own awareness of the nutrients it is receiving and not receiving that is controlling your cravings. Your family currently is getting tired of fish because all of them are getting too much of the nutrients that fish supplies. Try varying your diet a little bit more. If you stopped eating fish altogether you would probably start craving it again in a fairly short amount of time.

Homemade fish sticks and mac and cheese
Fish Sticks:
1 lb cod cut into strips
1/2 tsp salt
2 eggs
2 egg whites (in addition to the other eggs)
1/2 cup milk
Breading:
8 slices bread ran through blender
1/2 cup parmeasan cheese (I use the kind in the can for this)
1 1/2 tsp (or to taste) lemon pepper
Mac and Cheese:
elbow macaroni (however much you need)
Velveeta
milk
butter
Boil paste drain. Add other ingredients till creamy and cheesy!
In bowl beat eggs, egg whites and milk.
In large ziploc bag combine bread, parmeasan cheese and lemon pepper.
Pam cookie sheet (even if you use foil). rinse and dry cod, cut into 1 in strips, dip in egg mix, put in ziploc and shake till coated the breading. Put in pan. Repeat with all fish. Cook 400 for 15-20 min.
Mexican cod:
1-2 lbs cod
picante sauce
cheddar cheese
tortilla chips
avacado
Pam 9x13 baking dish. Rinse fish and place in pan pour picante (to taste) over them, crush tortilla chips and put on top, top with cheese. Bake at 400 20 minutes. When done put thin slices of avacado on fish and serve.

I love eating fish, get different types and try new idea's, like shark or fresh tuna... those are more like steak fish and good for grilling. I use tilipia and whiting fish wrapped in foil with onions, red peppers or/and green peppers, black olives and cherry tomatoes with lil olive oil and lemon pepper seasoning. Try salmon steamed on stove top, cover it with cauliflower, broccoli, onion, carrots and lime juice with lemon pepper seasoning, serve with steamed rice and i love to top with salsa Verde, so yummy. Salmon also cooks well on grill or in the oven with BBQ sauce. If you like catfish, bread it with ranch dressing and Italian bread crumbs and fry with olive oil. If your tofu is bland, you're not cooking it with the right things. As for the fish, what bout talapia or whatever?
I cannot stand fish, but love marinated, pan fried tofu.
