1 C shortening
1 C white sugar
1 C brown sugar
2 C crushed potato chips
1 C chopped nuts 2 C flour
1 t. salt
1 t. baking soda
2 eggs
1 t. vanilla
Cream shortening and sugars. Add eggs and mix well. Add dry ingredients, chips, nuts and vanilla. Mix well. Drop on a greased cookie sheet. Bake at 325° F for 10 minutes.

Instant Potato Cookies Recipe

Ingredients:
1 cup Butter
1 1/2 cup sugar, divied
3 eggs
1 teaspoon vanilla
1 cup flour
2 teaspoons cream of tartar
1 teaspoon soda
1/2 teaspoon salt
2 cups instant potato flakes
1 cup coconut flakes
1/2 cup chipped pecans
Directions:
Combine potato flakes with sifted dry ingredietns. Combine butter, sugar, eggs & vanilla beat until fluffy. Combine potato flakes with flour, soda, cream of tartar & salt. Alternate dry ingredients & eggs (one at a time) until mixed well. Roll into small balls then roll into the 1/2 c. sugar. Place 2" apart on ungreased cookie sheet. Bake at 400 F. until edges are light brown.
