Cheddar Potato Pie
1 lb lean ground beef or turkey
1 cup chopped onion (red, white or brown. Minced can be used instead)
1/3 cup Bullseye Bold bbq sauce, Honey Smoke or Original flavor
2 cups hot mashed potatoes (use 3 cups or more for a thicker potato covering)
1 package pre-shredded cheese, Mexican blend, 4-cheese variety, or cheddar jack blend
1 package pre-shredded mozzarella cheese
1 can pre-sliced black olives for garnish, if desired
Brown meat, seasoning with black pepper, seasoned salt & garlic powder & add onion (if using minced onion, add ½ thru cooking time. If garlic salt is used, omit seasoned salt) Drain all grease. Add bbq sauce & stir thoroughly. Pour meat into bottom of casserole dish. Add 1 large handful of both cheeses. Cover to allow cheese to melt. Prepare potatoes according to package directions & omit salt. If salt is used in the potatoes, your pie will end up salty. Spread hot potatoes over melted meat & cheese, covering completely. Use another large handful of both cheeses on top. Heat in microwave about 5 minutes to heat through. Use a large serving spoon to serve pie. Garnish with black olives if desired.
Tip: don’t use too much cheese. I have & it’s made it greasy. The salt from the potatoes ruined one of my pies when making this recipe once. So I’ve learned to leave it out. Garlic & seasoned salt as well as the taco seasoning will also make the pie salty. That’s why garlic powder is the best option.
Hamburger or Chicken Casserole
1 lb lean ground beef, 15% fat is best, or ground chuck
OR
2-3 large boneless, skinless chicken breasts
2 boxes Rice-a-Roni, 1 box broccoli au gratin (6.5 oz size), 1 box rice pilaf or chicken broccoli flavor (use this flavor only when using chicken) (7.2 oz size)
4 oz of Velveeta cheese, cubed or chunked
Prepare Rice-a-Roni flavors almost according to directions, omitting ¼ cup of the water. Use only 4 cups water. Reduce cooking time to 15 minutes. When done, rice will look sort of wet. Remove from heat & add Velveeta cubes or chunks. Cover to allow Velveeta to melt. If using hamburger, fry with fresh red, white or brown onion. Minced can be substituted. Flavor hamburger with garlic powder, black pepper & seasoned salt to taste. Use seasoned salt with care. Too much will make this dish salty (the seasoning from the rice-a-roni has salt in it). If using chicken, bake in oven, seasoning the top of the chicken breasts only. Cut chicken into small pieces or chunks. Add hamburger or chicken to rice, stirring well.
Serve with your favorite vegetable or salad.
Total cook & prep time, 1 hour. More time is needed if chicken or hamburger is frozen. When I make this with chicken, I send them through the defrost cycle on the microwave, then bake for 40-50 minutes. While it’s baking, I prepare the rice. If I’m using hamburger, I cook the rice first.

You could if you have rice take some white rice and cook it add some butter and salt and drain out all the water and add a teaspoon of soy sauce. But for meat Im not sure what is a fast quick dinner.

A real easy dish,1 of my favs. chicken casserole. Buy pre-cooked chicken,1bag of frozen veggie mix,1can each cream of mushroom soup &cheddar and brocllii soup, mix all together and top with parm cheese bake 350 about 30min or until heated thourgh. Serve over hot buttered rice!Very simple yet oh so good!

Mac and cheese. Boil water, salt the water, add noodles
let them boil 7 minutes or so , then strain water out and break off pieces of cheese ( American) I use about 6 or 7 slices. Depending on how you like cheese. VERy easy!

Homemade fish sticks and mac and cheese
Fish Sticks:
1 lb cod cut into strips
1/2 tsp salt
2 eggs
2 egg whites (in addition to the other eggs)
1/2 cup milk
Breading:
8 slices bread ran through blender
1/2 cup parmeasan cheese (I use the kind in the can for this)
1 1/2 tsp (or to taste) lemon pepper
Mac and Cheese:
elbow macaroni (however much you need)
Velveeta
milk
butter
Boil paste drain. Add other ingredients till creamy and cheesy!
In bowl beat eggs, egg whites and milk.
In large ziploc bag combine bread, parmeasan cheese and lemon pepper.
Pam cookie sheet (even if you use foil). rinse and dry cod, cut into 1 in strips, dip in egg mix, put in ziploc and shake till coated the breading. Put in pan. Repeat with all fish. Cook 400 for 15-20 min.
Pot Roast:
2 lb rump roast (you can get whatever size your family needs)
1 package Lipton Onion dry soup mix
water
worchestire sauce
salt pepper
garlic powder
In crock pot add water, stir in dry soup mix. Unwrap roast worchestire to taste, salt, pepper and garlic to taste. Put roast in crock pot cook on low 8 hours. When you get home from work turn crock pot on high add potatoes and baby carrots (and celery if you like) cook 1 hour. Sit down and eat!

chicken salads, buy some frozen chicken bites... put them in the microwave for a bout 3 - 5 minutes, and then put them in the toaster over on medium, and toast them,, the microwave cook the inside nice and hot and the toaster oven toasts them crisp on the outside. while they are toasting, shred some cheese and toss it all together. good to go in less than 10 minutes!
