I drink sweet stuff, like applejuice. I read somewhere that sweets cool your tongue down better than water.

The chemical in spicy foods that causes the burning sensation in your mouth is called capsaicin. Capsaicin is soluble in fats, alcohol and sugar while not so much in water.
Therefore, the best things to eat/drink after eating spicy food are: whole milk, ice-cream or juice. Anything with fat/sugar will bind well to the cacpsaicin and carry it off.

The trick is to actually concentrate on the burning to the point where you're taste buds get used the the pain. It sounds crazy but I love spicy food and that's how I do it. Or if you want to go the easy way, Milk.

Milk is always good. You can also try bland foods like steamed rice, which then helps absorb the spicy parts of the food that you just ate. Another thing is ice cubes, just suck on them for a bit to help.

Milk and bread help break down and absorb the capcasin stuck to the lining of your mouth. Water actually makes the burning worse.

Drink milk and eat saltine crackers. When I had a class experiment when I had to eat a sliver of a habenero pepper, milk and crackers cooled my tongue.

WARNING: don't drink water. it doesn't help at all. it only keeps your tongue cool while it is in your mouth. once you swallow it, it does you no good

eat bread and drink water. But I usually leave the spicy stuff alone.
