For this to be true, we would need to be not only ourselves but everyone else because we will have created them in our hearts and minds. Each of us a part of the whole. Not only people but all beings and all that exists or ever has or will exist. Each one effectively All-That-Is and All-That-Is... is us. We are all ONE. Blessings on your journey.

We don't. The whole concept of the self is flaky - what is the 'me' without my 5 senses and a brain that records experiences to those senses and weaves them together in linear sequence? Memory itself is just an imprint into the neurons; remove them and the memory goes away. Find the exact mechanism for memory and you could create memories. And, without a brain, time and space don't exist; these are concepts that we continually recreate in our brains.

We could imagine a world where everyone in it is manufactured with built-in memories ('experiences') where people believe various people are born at various times, die at various times, have kids, etc.

Umm that's a good question... but not very logical (unless you have evidence to suggest that that's exactly what happened) how would that work scientifically? And if someone did create us yesterday than what would be the purpose? And also what about the other evidence that shows we've been here longer than a day, all the structures and the internet.

Otherwise known as the "Last Tuesday Theory of Creation". It is as equally plausible and has just as much evidence as the "six day creation" myth of christians (ie. none).

How do we know? We don't, but that doesn't mean you assume fantastical myths are true in the meantime.
