i have some questions about it , some of the religous laws on preparing food and what not. i know you need 2 sets of just about everything. is it hard to follow all the rules?

its not easy thats for sure.

as a Jew that keeps kosher I will tell you a lot is involved not only when it comes to dishes but also how you clean them and cook the food as well. Not to mention the food itself,

My best advice to know more about the subject of Kashrut you should by beginners book on the subject that explains the basic background.

You are talking about Orthodox Judaism. You must keep meats and dairy separate, so you do need two sets of everything. However if you grow up in this religion it is normal and easy for you. If you belong to the Reform Sect of Judaism you do not obey the dietary laws.

I am not Jewish but have eaten at many Jewish households.

The Dietary Rules are pretty well Sanitation Rules.
A few of them, like not eating Pork, are left overs form old times.
Pork sometime does cause Trichinosis(?) so is still probably a good idea not to eat it.

I love Pork - but I certainly can see living without it.

Not really. One set is for milk dishes the other for meat. Never mix the two. This is really orthodox judaism though.
