Key lime pie mmm mmmmm mmmmmm

1c. sugar
1/4c. flour
3tbls. cornstarch
1/4tsp. salt
2c. water
3 large eggs separated
1tbls. butter
1/4c. fresh key lime juice
grated rind of one lime
bakes nine inch shell
top with cool whip or meringue which ever you prefer

Combine sugar,flour,salt,cornstarch,slowly add water stirring constantly until thick and bubbly.
slowly add mixture to beaten egg yolks return to low heat and cook an additional 2 mins. stir in butter,rind,and juice, after removed from heat. Cool slightly then pour in baked pie shell.
Cool completely top with the meringue or cool whip (your preference)

There are many desserts that tickle my fancy, but I will always cherish this one the most. When my daughter was a very little girl, while other girls were baking cookies, we would bake Graham Cracker Surprises!

Ingrediants: Graham Crackers, 2 sticks of real butter, Cup of sugar, half cup of pecans (or any other nuts you like)

Heat oven to 300 degrees. Melt butter and sugar in a small sauce pan. Stir until mixed. Open up the crackers and place 1 or 2 whole packages) them unbroken into a large roasting pan. Pour the mixture all over the graham crackers. It's ok if the mixture runs off, just make sure you soak the crackers (make more if necessary). Top with broken nut pieces and place in the lower part of the oven to bake for about 20 minutes. You should see the crackers turning brown, but don't let it burn. Take the pan out and allow to cool for about 10 minutes. WIth a fork or knife, break up the mixture. The sugar and butter mixture should have a 'candy like coating' all over. Get a tall glass of milk and go crazy! It's the cheapest and sweetest most simplest way to get your kids baking with little ingrediants. I still love these cookies!

CHOCOLATE CHIP ZUCCHINI CAKE

1/2 c soft oleo
1/2 c salad oil
1 3/4 c sugar
2 eggs
2 1/2 c flour
1 tbl cocoa
1/2 tsp baking soda
1/2 tsp ground cloves
1 tsp vanilla
1/2 c sour milk
2 c grated unpeeled zucchini
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 c chocolate chips (save some from bag to sprinkle on top)

Cream oleo, oil & sugar. Add eggs, vanilla & sour milk. Beat well. Sift all remaining ingredients (except zucchini)together & add to creamed mixture. Beat well. Stir in zucchini. Spoon into well greased & floured 9x12 glass cake pan.

Sprinkle chocolate chips over the top. Bake at 325 for
40-45 min. Test with toothpick for doneness. Completely cool in pan on a wire rack.

Sour milk: 1 tsp lemon juice or vinegar in 1/2 c milk. Let set for 5 min.

This was given to me by a babysitter 15-20 yrs ago. Has become a family favorite ~ Enjoy!

"Sex in a Bowl"

Ingredients:
1 Box Chocolate Fudge Cake
2 Packages Chocolate Pudding
2 Packages Vanilla Pudding
Strawberries
Bananas
Cool Whip
Heath Bar Crunchies (chopped up): at least 1 pint

Bake the chocolate cake and make the pudding first.

Layer the prepared ingredients as follows in a small punch bowl:

Chocolate Cake, Vanilla Pudding, Chocolate Pudding, Strawberries & Bananas, Cool Whip. Top with the Heath Bar Crunchies.
Continue layering until your ingredients run out. Have fun with it. It tastes damn good...trust me!

Indoor Peanut S'mores

Graham Crackers
Marshmallows
Chocolate syrup
Creamy Peanut butter

Take a graham cracker and break itin half. Spread each half with peanut butter.
If you are using large marshmallows, cut 1 into 4 pieces adn arrange them on 1 cracker on the peanut butter. If you are using minuature ones, just arrange on peanut butter.
Drizzle on some chocolate syrup.
Place on a microwave safe plate adn microwave for 15-20 seconds.
Careful! The s'mores will be hot, melty, and messy!

This is easy... you will need:
One graham cracker crust
one can of pie filling of your choice, I like cherry
one can sweetened condensed milk
3 egg yolks
1/3 cup lemon juice

preheat oven to 350 mix together sweetened milk, egg yolks, and lemon juice should get thick on you. pour into pie crust and bake about 25 minutes or until set in the middle remove from oven and cool for one hour on wire rack. when completely cool move to refrigerator and leave for 2 hours.IN the mean time place your can of pie filling in the fridge to cool. When ready to serve your pie, remove from fridge, open pie filling and spread onto the pie. cut and serve. Really you just have to plan ahead for this pie. It's really easy to make.

Fresh Fruit shorbet

Ingredients:

Select on of the following Fresh Fruits:
2 Mangoes (Skinned, Pitted, and cut in 2 inches chunks)
1 Papaya (Skinned, seeded, and cut in 2 inches chunks)
8 Kiwis (Skinned and cut in chunks)
2 to 3 Oranges (Juice)
2 to 3 Lemons (juice)
3 to 5 Limes (Juice)
1/2 Honeydrew Melon (Skinned, seeded, and cut in 2 inches chunks)
1/4 to 1/2 Watermelon (depends on the size)

Juice of 1 lemon or lime (not necessary if making Lemons and limes)
Sugar water (Just water if you don't like sugar)

Methods:
1. Put fruit, lemon juice and sugar water in a blender or food processor. Blend until smooth.
2. Pour into a plastic container and put in freezer uncover for 3 hours.
3. Put in blender or food process one more time and blend until smooth.
4. Put back in the freezer uncover for 3 to 4 hours.
5. Put a cover and serve as needed.

*** If fruit is sour, put about 1 to 2 teaspoons lemon or lime juice. Don't put whole juice of lemon or lime.

Lemon Glazed Cheesecake

Crust:
2 cups graham cracker crumbs
6 tablespoons butter; melted
2 tablespoons sugar

Filling:
3 8 ounce packages cream cheese
3/4 cup sugar
3 eggs, room temperature
1/4 cup fresh lemon juice
2 teaspoons grated lemon rind
2 teaspoons vanilla

Topping:
2 cups sour cream
3 tablespoons sugar
1 teaspoon vanilla

Lemon Glaze
curled lemon strip, large strawberry and mint leaves for garnish

Preheat oven to 350F. Combine first 3 ingredients thoroughly. Press crust evenly onto bottom and sides of buttered 9 inch springform pan. Bake crust 5 minutes. Allow to cool. Beat cream cheese until soft. Add sugar, blending thoroughly. Add eggs one at a time, beating well after each addition. Mix in lemon juice, rind and vanilla. Blend well. turn into pan and bake 35 minutes. Meanwhile, blend sour cream and remaining sugar and vanilla. Remove cake from oven after baking 35 minutes. Gently spread sour cream mixture over top. Return to oven and bake 12 more minutes. Cool cheesecake on wire rack 30 minutes. Spread with slightly cooled lemon glaze, before glaze sets. Chill several hours or overnight before removing sides of pan.

Lemon Glaze

1/2 cup sugar
1 1/2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup water
1/3 cup fresh lemon juice
1 egg yolk
1 tablespoon butter
1 teaspoon grated lemon rind

In heavy 1 quart saucepan mix sugar, cornstarch and salt. Combine water, lemon juice and egg yolk and add to sugar mixture. Cook over low heat, stirring constantly, until mixture comes to a slow boil and thickens. Add butter and lemon rind. Allow to cool slightly, but spread on cheesecake before glaze sets.

I don't eat dessets. But I do eat fruit dishes. That is so self explanatory. Just put mixed fresh fruit cut up in a bowl. Easy!!!
