Hey there Momattexas: This is my own personal favorite!! Easy too!!! Give it a try..I don't think you'll be disappointed.

Chicken Ritz Recipe #84526
I love this recipe because it's so easy to throw together and takes no time to serve. It's a half hour in the oven and it's ready. It can be prepared a day ahead of time for those busy people, just keep it refrigerated. It's served best with cranberry sauce to the side or just spread on top of it after its cooked..it's yummy!!
2 lbs boneless chicken breasts (as much as you'd like to prepare)
1/2 cup butter, melted (I use one stick for about 4 chicken breasts)
2 packages of ground-up Ritz crackers
4 servings

1. Cut off all unecessary fat from chicken breasts.
2. If breasts are thick, cut in half so you butterfly them.
3. Pound down with a mallet so they're not too thick, but not paper thin either.
4. Dip the breasts in your melted butter, both sides.
5. Dip the buttery breasts into the ritz cracker crumbs, on both sides and press firmly so the crumbs really stick to it.
6. Place on a cookie sheet in oven set at 350* for 15 minutes on both sides.

My family favorite.

Cheddar Chicken Breasts Recipe

4 small (4 ounce) boneless skinless chicken breasts
4 1-ounce slices reduced fat cheddar cheese
2 cups crushed corn flakes cereal
Salt and pepper to taste
1 teaspoon dried parsley flakes
1/2 cup skim milk

Cut a 2-inch long slit 1/2 way through each breast along the thickest side. Place 1 piece of cheese into each chicken breast and secure the opening with wooden picks. Combine cereal and seasoning. Dip chicken into milk then generously roll in cereal mixture to cover completely. Place chicken breasts in a baking dish sprayed with nonstick cooking spray. Bake at 375 degrees for 40 minutes or until no longer pink.

Makes 4 Servings
Serving Size: 1 chicken breast

Ooooo, I just made this last night. Smothered chicken and rice. It was soooo good.

You will need:
4 nice size boneless, skinless chicken breast
white or brown rice (enough for 4 servings)
2 cans of Campbell's mushroom soup
Scallions
Oil
Minced garlic
Sage, salt, pepper, paprika
Milk

Make rice as directed, set aside. Season chicken with salt, pepper, paprika and sage on both sides. Get a large frying pan and cover the bottom with oil. Heat on medium and add chicken for browning. Cook about 5-8 minutes on both sides, remove chicken from the pan and set aside. Open both cans of mushroom soup and pour contents into a saucepan. Add a can and a half of milk and heat according to the directions. Turn off heat. Use the frying pan (dispose of oil) and saute scallions (add as many as you like) and minced garlic. Once done, place chicken breast right on top of the scallions. Then pour mushroom soup over the chicken. Cover and simmer for 15-20 minutes. When done, serve over top rice. Yummy.

One zip lock plastic baggy, couple chicken breasts and a bottle of Teriyaki sauce. Add about 1/2 cup of the Teriyaki sauce to the baggie along with the chicken. Seal the baggie and shake it up to coat the chicken. Allow to marinate for an hour, remove from bag and grill or cook in a fry pan.

The tastiest is
Rinse chicken and pat dry with paper towels, put chicken into Ziploc bag with breadcrumbs (1/2 cup per boneless, skinless breast), salt, pepper and shredded Parmesan cheese into a Ziploc. Shake, saute with olive oil, butter, or margarine until browned. You can finish in the oven at 350 for about 15 minutes.

Great is with Spaghetti and red sauce. You can also put mozzarella cheese on the top and pour the pasta sauce over it. Yum! Our family loves this.

Preheat the oven to 350.

Brown the chicken breasts on the stove top if you wish.

Put them in an oven-safe dish. Pour a can or two of cream of chicken or cream of mushroom soup (undiluted) over the chicken.

Add any seasonings that you like (garlic powder, onion power, chili powder, curry, minced garlic, minced onion, etc)

Add a can or two of chicken broth. Stir.

Cover. Put it in the oven, bake for about 1 1/2 - 2 hours.

Serve with baked potatoes and the vegetable of your choice. The soup makes gravy.

Here are 2 recipes my family likes

Bacon mushroom chicken
2 tlbs melted butter
chicken breast
seasoning salt
crushed garlic
slices bacon
mushrooms (I use fresh and alot but it is per taste)
heavy whipping cream

preheat oven to 350. Melt butter in 9x13 pan. Add chicken sprinkle with seasoning salt, flip, sprinkle again. Top with garlic, add strips of bacon (i do 2 slices per breast) top with 'shrooms. Bake 1 hour.
When done add drippings from pan to cream, heat over med until it starts to thicken. About 5-7 min. pour over chicken, serve.

Chicken Enchilidas
1 tlbs butter
1/2 green onion chopped
1/2 tsp garlic powder
4 oz diced green chilies
1 can cream mushroom soup
1/2 cup sour cream
1 1/2 cups chicken breast (you can use canned chicken or boil real breasts and shredd or dice)
1 cup cheddar cheese
flour tortillas
1/4 cup milk
1 can olives (optional- my family just loves them)

Preheat oven to 350. In large pan, on the stove, melt butter, add onions, cook til tender. Add garlic powder, chilies, soup and sour cream. Mix well. Reserve 3/4 of this in a separate bowl. In pan add chicken and 1/2 cup cheddar cheese, stir.
Fill tortillas with this mix. Roll up, seam side down, place in 9x13 pan (spray this with Pam).
Add milk to remaining sauce in bowl, stir pour over tortillas, top with cheese.
Cover with foil bake 20 min. Take foil off bake 10-15 more minutes.

chop up into bite size pieces and saute in a pan with a little oil and butter with onion, mushrooms and garlic (and sun dried tomato if you have them) then pour in a bottle of Ragu and a small block of cream cheese in pan.When the cream cheese has melted pour over some cooked three cheese tortellini and serve with Texas toast!!!It's delish!!

Marinate in itallian dressing. SO YUMMY. I grill them on the barbeque, but you can also cut them up and grill on a skillet. I love to use this recepie for wraps. Happy cooking!
