When I'm all out of ideas, I just open a cookbook and make whatever sounds most appealing. There is one dish I love and I can't make it because my husband is allergic to carrots, but it's called Coq au Vin, it's got chicken, carrots, mushrooms, pearl onions, etc.

BEEF KENNEDY
2 lbs. cubed chuck roast (nice inexpensive cut of beef, but gets tender because it cooks so long!)
1 can cream of mushroom soup
1/2 container sour cream ("regular" sizel container - not a large one)
1/4 milk
1 pkg.dry onion soup mix
1/2 cup red wine
1 lb. sliced mushrooms
Place stew beef in crock pot; add mushrooms on top. Mix soups with sour cream, red wine, and milk. Pour over beef and mushrooms. Cook on low heat for 8 hours in crock pot. Serve over boiled egg noodles or rice.
