1 tbls oil
1 pork chops (I use the boneless butterfly chops)
1 cup apricot jam
1 cup catalina salad dressing
1 package lipton dry onion soup
salt/pepper to taste

Preheat oven to 400. Salt/pepper chops. Heat oil in skillet fry chops5 min each side til brown. Place in 9x13 pan (spray this with Pam). In bowl mix soup, dressing and jam. Pour over chops. Cover and bake 40 min. When almost done open a can of corn, put in pan add a little butter, salt and pepper heat of medium low about 10 min. Have a package of Lipton pasta or rice sides. Prepare as per directions in microwave (take 10-15 min depending on what you get). Add a loaf of the homemade bread from the store and you got a simple, good, cheap meal!

Take 2lbs. ground beef, brown it with 2 pkgs taco seasoning. Spread in bottom of casserole dish. Layer the following, top meat with salsa, then sour cream, then shredded cheese, then Tostitos (restaurant style work best), then salsa and cheese. Bake at 350 for about 45 minutes or until real bubbly. Enjoy!!

When I'm all out of ideas, I just open a cookbook and make whatever sounds most appealing. There is one dish I love and I can't make it because my husband is allergic to carrots, but it's called Coq au Vin, it's got chicken, carrots, mushrooms, pearl onions, etc.

BEEF KENNEDY

2 lbs. cubed chuck roast (nice inexpensive cut of beef, but gets tender because it cooks so long!)

1 can cream of mushroom soup
1/2 container sour cream ("regular" sizel container - not a large one)
1/4 milk
1 pkg.dry onion soup mix
1/2 cup red wine
1 lb. sliced mushrooms

Place stew beef in crock pot; add mushrooms on top. Mix soups with sour cream, red wine, and milk. Pour over beef and mushrooms. Cook on low heat for 8 hours in crock pot. Serve over boiled egg noodles or rice.
