I did put it back in the fridge. I'm talking about after it is left on a plate.

Mayonnaise is emulsion of oil in water. lemon juice and egg yolk are the emulsifying agents. If you leave it out the water evaporates and the oil, egg and other stuff is left. oil and water reflect light different and in mix look whitish, or at least not clear, oil by itself is clear. I hope i have explainated well.
Most brands do this , but artificial or low fat spreads are not emulsions and act different

Because mayo shouldn't be left out for a few hours...it goes bad. I would assume that it turns clear is because the ingredients have started to separate.

Quit leaving the mayo out! I hate it when you forget to put the mustard, ketchup, pickles and mayo back in the fridge!

The EGG ( not fat ) is separating from oil. Oil is fat!
