The same way that volume controls in other parts of audio systems work.

They use a potentiometer, which is connected in the signal path as a variable attenuator.

Wih it turned "up" - clockwise with a rotary control - there is less attenuation of the signal, and vice versa.

the volume is regulated by a variable resistor(generally a potentiometer)...
when the volume is increased the resistance decreases and the output increases, and when the volume is decreased the resistance increases and the output decreases
